I doubled this and used some red cabbage as opposed to bok choy because I had it, very colorful with the carrots. A nominal fan of tofu, I really liked the texture of the steak-style tofu used in this recipe. The dressing is great! A bit different in that usually any sauce or dressing I've had with peanut butter tends to have a sweet component. This does not. I also used the Sriracha Hot Chili Sauce I purchased for other recipes in this issue.
