Does anyone have a recipe for a cranberry orange loaf?

Thanks in advance!

I use the recipe on the back of the bag of Ocean Spray cranberries. It is delicious!!

CLASSIC CRANBERRY ORANGE NUT BREAD
2 cups flour
1 cup sugar
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3/4 cup orange juice
1 tb. grated orange peel
2 tb. shortening
1 egg, well beaten
2 cups fresh cranberries chopped (I pulse them in my food processor)
1 /2 cup chopped nuts
Preheat oven to 350. Grease 9 x 5 loaf pan. Mix flour, sugar, baking powder, salt and baking soda in a bowl. Stir in orange juice, orange peel, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Spread in loaf pan. Bake 55 minutes or till cooked through. Cool on rack 15 minutes. Remove from pan, cool completely. Wrap and store overnight. YUMMY!!!

Here's one that andi posted on this board. It has received major raves from those on this board who have tried it, me included!

OK-Here's my cranberry bread recipe! My family hates nuts so I don't usually add them...
Mom's Cranberry Bread

2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1 cup cranberries (fresh or frozen, washed and chopped or halved-I use my food processor)
1/2 cup chopped nuts
1 beaten egg
3 tblsp. oil
1 cup orange juice

Sift dry ingred. together. Add cranberries and nuts. Add eggs mixed with oj and oil, mix slightly. Bake in greased loaf pan @ 350 x one hour.

* I always double the recipe to use the whole bag of cranberries. This is sooo moist and good! I think I may need to make some!

Andi's mom's cranberry bread is the best I've ever tasted! I'd make that one. http://www.cookinglight.com/bbs/biggrin.gif

Do you think I could substitute V8 splash for the Orange Juice? I need to bake something for a bake sale tomorrow and don't have orange juice.

Thanks.

I baked mini loaves of Mom's Cranberry Bread for gifts this year. I doubled the recipe and used almost a whole bag of cranberries. The flavor was good, although I might have added orange zest for a little more orange flavor. Also, the texture was a little spongy, so it did seem like a "light" recipe.

There is a "Cranberry Orange Tea Cake" from March 2001 that I made this fall that is really good. It really is a loaf, although they call it a cake. DH loved it!

I wanted to get back to this. I had a couple slices of the Mom's cranberry bread this morning and it was delicious! Maybe it needed to sit in the fridge for a few days to get more of a dense texture. Now I'd highly recommend this recipe -- just don't eat it right out of the oven.
