View Full Version : Can you preserve mangoes? And how?

I love the flavor of mangoes.

I'd like to preserve the really sweet and ripe ones that I get somehow.

Has anyone had any experience with this?

Haven't done them myself but have a friend who did some last year. Fairly easy, she said! She used this site (http://www.havennook.com/kitchen/homecanning/fruitchart.htm) for instructions. HTH!

I froze some -- just cut them up and put them in freezer bags. You can also make jam with them if you don't mind loosing some from other uses.

Wouldn't that make them mushy if you canned them??? Just curious about the consistency once they were canned.

I buy them in jars in the grocery store when they're out of season and they're not mushy. Since you don't cook them just pour the simple syrup over them before processing I think they'd still be fairly firm.

If I find some more great mangoes, I may have to try a jar or two while doing a batch of something else just to see how they compare with the frozen. I imagine each will soften some, but if not firm enough for salsas, I still have a lot of things I can puree or cook them in.
