Do you have a specific recipe in mind? I recently used those vegetable crumbles in place of ground beef in spaghetti and in tacos-told no one and no one guessed-all was eaten at both meals! It has soy protein in it but is not tofu.
Seitan!! http://www.cookinglight.com/bbs/smile.gif Very good and a better meat substitute. It is made from wheat gluten so no good if you have a wheat allergy. You probably need to go to a health food store to get this.

I'm not sure what you are trying to make, but in some instances (say, in a eggless egg salad) you can use just the whites of a hard-boiled egg. You can also use these in stir-fries or pasta dishes (sounds gross, I know, but it tastes the same).

I love those crumbles! We get the Morningstar Farms kind. I use them in chili all the time. No one has figured out yet that it's not hamburger.
With some Italian foods you can replace the tofu with ricotta cheese - this is something else that I serve tho' that people don't realize they're eating soy.
I also made a cheesecake once that substituted tofu for some of the cream cheese. So maybe that would work vice versa?

Hard as I try, I cannot imagine these veggie crumbles passing undetected as meat in chili, lasagne, or any other dish calling for ground meat.

LOL. There really are quite a lot of people who like those and claim you can't tell the difference (I know quite a few of them <g> ) especially in something highly seasoned and/or with lots of other ingredients. I, however, hate them. And I can tell the difference too. But I think my dislike comes from the fact that I don't care for meat very much and I find that I like most of the substitutes even less.
Really, if you like them, a lot of the meat substitutes work great in place of meat in just about anything ("if you like them" being the key words here <g> ) A can of vegeburger in place of the hamburg in a recipe makes a great meatloaf or tamale filling. I've even made jerk chicken with a can of Frichic (actually, much to my mom's amusement, that was the only time in my life I was convinced frichic was edible <bg> ).

Depending on the recipe, ricotta cheese works well in place of silken tofu -- it won't get quite as smooth, but it's unobtrusive enough to work under certain circumstances.
I truly think there is an art to preparing edible tofu -- I've had good...I've had bad. You're not alone in your hesitation -- but I would encourage you to keep trying it! Good luck http://www.cookinglight.com/bbs/smile.gif

Seriously http://www.cookinglight.com/bbs/smile.gif- several of the people I've given my chili to (my BILs) would turn their noses up at the idea of soy crumbles but they've eaten it and haven't uttered a peep.
Chili is the only thing I've tried it in and I do still use tons of beans and tomatoes in it and a comparitively small amount of the crumbles (one bag will make 3 pots of chili). Maybe that makes a difference?
