DH wants bigger lunches, with good stuff in them (ie not potato chips), but I'm at a loss. So how about a quick lunchtime survey?
I had:
Teriyaki beets
Boiled baby potatoes
4 pieces of dried fruit
Raspberry yogurt
And a cup of cold coffee to drink. :p

It's in my cooler, and I am SO ready to eat it, cos I'm starving. 17 more minutes!
3 oz chicken breast (plain baked); 1 T red pepper & vegetable spread; 2 slices Ezekiel bread; 2 T skim-milk cook cheese (must enjoy the dairy-- it is almost going away); 1 cup of baked ratatouille-like stuff I made last night.
And no apple. I forgot it. :mad:

Small tossed salad (carrots, cucks, broc, tomato,) w/ a little parmesan and balsamic vinegar
Garlic/lemon green beans
SBD fake mashed potatoes (cauliflowers)
Nothing too exciting today;)

I've been craving lasagna for over a week now, but can't have it. So instead I'm making my own mock lasagna -- I cooked some extra pasta when I was making a pasta salad for last night's supper, and I'll mix that with some frozen spinach, jarred pasta sauce, soy crumbles, and lactose-free cottage cheese. I had the same thing yesterday for lunch and it was so yummy and Kari-friendly! :D Sure helps with that craving!

Two of CL's lemon-garlic baked chicken thighs and a small side of Israeli couscous baked with cheese. Been picking away at b'berries all morning, so that was my fruit/vegetable.

some type of fruit (either an apple or some pineapple)

I have today off, so I made a variation on a sandwich recipe in Annie Somerville's Everday Greens cookbook. I caramelized some onion, added some sliced chard leaves along with 2 chopped olives, some fresh marjoram, and a splash of sherry vinegar and let the chard wilt. That went into a whole wheat pita along with sliced tomatoes and a slice of provolone. Really quite yummy, and better than my usual work day lunch of leftovers!:) (The original recipe calls for fresh mozzarella, no olives, and for grilling the onions. It's also delicious.)

Leftover pizza I made (store-bought crust, though, despite the pizza dough thread!). One with sausage/red pepper/shrooms, the other with pears, gorgonzola, and caramelized onion.

Leftover "Asian Halibut Packets" from the Summer issue of Eating Well. I used Cod though, not halibut. Yum yum.

I made a big Chinese Chicken salad and threw it all into a low carb whole wheat tortilla. The chicken was cooked Asian marinated chicken breast and the dressing was something I threw together.....which came out great!
The proportions may be a little off, but it was something like this:
1 tablespoon Chinese plum sauce
1 teaspoon soy sauce
1 tablespoon rice vinegar
1/2 teaspoon sesame oil
chopped fresh cilantro (didn't measure)
chopped fresh ginger (didn't measure)
chopped fresh garlic (didn't measure)
It was incredibly good!

I had a fairly boring lunch.
Boca Burger on a Whole Wheat Pita
3 small sliced tomatoes
2 small plums
and 1 peach for around 4PM
We are having Terryx Lime Chipolte Flank Steak for dinner and that's about 10 points alone!!!

My lunch is usually my smallest meal and then a snack later.
But I'm BORING ;) I always have PB&J (my favorite!!!!!!) and fruit!
DH usually has PB&J, fruit, yogurt, nuts or crackers, muffin, cheese stick (this is what he snacks on all day before dinner)

I just had tuna on a whole wheat pita w/ tomatoes and a side of baby carrots. And now I'm ruining it with dessert! Its a recipe I got off the BB called Peanut Butter Fingers. YUM!!

Let's see, I had a mixed green salad with carrots, chickpeas, and tofu with some marinara and a white bean-garlic soup that was actually quite good for cafeteria food. And a plum. :cool:

But if you described it like they do in the Lean Cuisine commercials, you could impress people ;).

I'm having leftovers today. We went out for Indian food last night, so I had a bit of mushrooms muteer, sag (spinach) chaman, and chicken
tikka masala. I also had a few Lousiana Crab Cakes from the CL July issue. One of my coworkers asked to try them, and after one bite declared them the best things he's ever eaten. He's prone to exaggeration at times, but I was still flattered. :D

Yummy lunch today! Leftover grilled asian pork chops, brown basmati pilaf, grilled veggies, and baby carrots. A peach later on for a snack.

I had perfectly sauteed julienne vegetables and chicken in a spicy Szcechwan glaze, a top a cozy bed of lo mein noodles.
How's that? ;)

Leftover roast chicken in half a pita with lettuce, tomato, and yogurt-garlic sauce. Nuked for 10 seconds, and almost as good as the greasy Chicken Schwarma from the place down the block, but much healthier.
If only I had some of those hot-pink cubic pickled turnips. I love them.
Oh yeah...and a diet Coke.

I had Baked Ziti with Fried Eggplants. I didn't make it...when I got home from yoga last night, there was a whole casserole of it that my mother had given my husband. So I had some last night and some today for lunch!! Delicious! And :o a Milky Way bar. Once in a while I just can't resist that caramel chocolate goodness...

Our office building had an ice cream social this afternoon, so my afternoon snack was a Dove ice cream bar - vanilla ice cream, milk chocolate, and almonds. yummmm.

Cooking Light's Goat Cheese with Fig Preserves on Raisin Bread with 3 oz of deli turkey. I am so in love with this sandwich! Also had some diced honeydew melon and 2 pumpkin-chocolate chip brownies for dessert!

I had a Side-by-Side from Baja Fresh. It's charbroiled chicken and a side salad with avacado. Served with shredded jack cheese, guacamole, and salsa. Yum! It's one of my favorite take-out lunches or dinners.

I had part of a Greek salad from Panera. I was on an interview and they took me out to lunch. Why do they think that is a good idea? As if you aren't nervous enough already! I made it through without any stomach upset or food on my dress though, so all in all a successful afternoon.

I'm interested in how many people plan ahead and have scrumptious leftovers for lunch.
When I was teaching, I would just have yogurt and a piece of fruit.
No lunch today. I went water skiing this morning (8 o'clock on the dock is our rule), and afterwards had breakfast at Ernie's. Even splitting a tostada omelet with my DH, I didn't need lunch. (Missi knows what I am talking about!)

Resurrecting the thread.
I have to plan ahead or I won't eat properly. That doesn't mean I get scrumptious lunches the way all of you have described, but it does mean that I actually take the time to eat something. I bring my breakfast (a L&L yogurt and Low Carb Special K) and my lunch (some sort of salad) everyday.
Today's lunch is spinach salad with 1/4 C. LF cottage cheese, mushrooms, carrots, and 2 oz. of grilled chicken on top. I use chipotle mustard as a salad dressing. It's yummy. Plus, I have two plums - one for with lunch and one for snack.
Does anyone else plan their lunch out ahead of time?

Today was leftovers from last night - Bobby Flay San Antonio Style Goat Cheese Enchiladas with Red Chili Sauce....very very yummy. (Food Network)
Now I'm munching on some cherries and tonight is L'Ecole with LauraB and hubs :D

I normally would have a bit more than this, but I wasn't feeling well and this was all my tummy would tolerate.
