I'd try a bit of an Italian blend. I'm sure that would be fine with it.

The spinach does sound like the best option - but also - I think the parsley is more for color than taste - I think you could leave it out all together & it would taste just as good - & it is GOOD!!!

Another great substitute for parsley (in just about ANY recipe, not necessarily the Chicken Francais only) is cilantro! MMMM! I do that A LOT!
Come to think of it, it would probably be great in the Chicken Francais, too... http://www.cookinglight.com/bbs/smile.gif

I thought about cilantro, but I wasn't sure if it would be too strong a flavor. I think I'll try the spinach and see how it goes.

I just noticed that the chicken francais recipe that I was planning to make tonight calls for 1/4 cup of parsley. I'm allergic to parsley and usually I would just leave it out, but given the quantity, can someone recommend a substitute?

I read on the Chicken Francais post that people were using chopped up spinach as a substitute. Even LynnB, whose recipe this is originally (she's the one who submitted it to CL) tried it with spinach and said it was great. Good luck!
