I made this last night for dinner and enjoyed it. I loved the spinach, lemon, feta, and raisin mixture. I think this alone would make a great side dish. I was worried about the crust when I assembled the focaccia because there was a lot of liquid in the spinach mixture. The bottom came out quite soogy, but still held up during eating. I am not sure how well this will reheat because of the soggy bottom. I sent the leftovers with DH and am interested in what he has to say. It came together quickly and had a great flavor.

I thought this was excellent! I made it as my main dish and it completely satisfied me. The flavor combination was wonderful, the sweet from the raisins, the salty from the feta....yum!
Mine didn't get soggy at all. I'll be enjoying the leftovers for lunch tomorrow...I'll post how well it re-heated.

I made this last week for dinner and loved it. DD hated it (she's 6 and picky anyway. DS ate it without complaining, but didn't act like he loved it. DH said it was 'okay'. Mine wasn't soggy at all. I think all doughy things like this crust reheat chewy in the microwave and it did, but wasn't unpalatable. Probably if I had taken the time to reheat it in the oven, it would have been great.
I thought it came together very easily and I will definitely make it again. Just have to plan it around the family's mood!

I had the leftovers for lunch and it heated well. The bread of course wasn't crunchy, but not very soggy either. Oh, it's sooo good.

Do you think i vould use frozen chopped spinach for this recipe? That's all I have.

I wanted to make this recipe, bought all the stuff (except I used crescent rolls, b/c I was confused with another recipe), and then forgot my CL at my sister's house! So I kinda' improvised. I have used both fresh and frozen spinach (I have made my version of this twice), omitted the raisins, and put the mixture into crescent rolls (I used two triangles and wrapped the dough around the mixture. Kinda' like a spinach pie). My hubby loved these, I took them to work and have been handing out the recipe to coworkers ever since.
If you use frozen spinach, make sure to really squeeze all of the liquid out first!

Made this for dinner last night with a small substitution. Forgot feta cheese & didn't notice till I got back from shopping. so I subbed goat cheese. I liked it although I might go easier on the raisins or leave them out completely. DH did not like the raisins. He doesn't like the sweet/savory combo. easy & tasty. It would be different without raisins but I think just fine. My pizza crust was warm from the shopping trip & very sticky. make sure it's cold so it will be easy to handle.

I made this for lunch today and had the leftovers for dinner it was so good! The only change I made was to cut the pizza dough into 6 squares and divide the filling, and made triangles. DH loved it too. Super easy :D

I had a heck of a time with this one -
I had the same problem with sogginess (I don't like frozen spinach, so I used fresh). When I added the filling to the dough, it got so slippery, I couldn't get it to stick together. I had to use paper towels to soak up all the excess liquid. What was supposed to be a fairly easy dish turned into one I wanted to dump in the trash :mad:
But once it was done, it was pretty good and the leftovers were fine. Next time, I'll simply cook the spinach separately and squeeze off the liquid.
