View Full Version : Need substitution for 'SELF RISING FLOUR"

I want to try the cookies on pg 164 of the August issue. I don't have "self rising flour" and don't want to buy it just to try this recipe. Can you tell me how to substitute it with regular
unbleached flour and/or baking powder or baking soda????

self-rising flour = (in older cookbooks) pancake flour Shopping hints: This is more commonly used in the South than in the North. Substitutes: 1 C all-purpose flour + 1 ˝ teaspoons baking powder + ˝ teaspoon salt

Does this also apply to self-rising cornmeal? I see a lot of recipes calling for that but I only have regular (sorry - don't mean to hijack the thread:) )

Here's what Cook's Thesarus has listed:
self-rising cornmeal To make your own: Combine one cup cornmeal, one cup flour, one tablespoon baking powder, one teaspoon salt, and 1/4 cup butter or other fat.

That might make a good (northern-style) cornbread mix, but it is not the same as self-rising corn meal. First, there is no fat. Second, true self-rising cornmeal has no wheat flour. Some of the self-rising products labeled as mixes have some wheat flour, but certainly not in amounts equal to the cornmeal itself. I have a bag of White Lily "mix" in the pantry right now, and all it contains is white cornmeal, wheat flour, salt, baking powder, and the usual perservatives and some vitamins & minerals.
Martha White, another venerable brand, says this on their web site about their product: Self-Rising Corn Meal contains Martha White's special "Hot RizeŽ" leavening (baking powder) and salt ....

When I posted this I thought it sounded odd!:confused: But then I went to fix dinner...

SELF-RISING CORNMEAL (one cup) Add 2 teaspoons of baking powder and 1/2 teaspoon of salt for each cup of regular cornmeal

Thanks! Actually, after I posted, I checked in MC7 TOOLS, and there was my answer, 1 c flour, 1 1/4Tablesp. baking powder, pinch of salt!

So Curleytop - How did the cookies turn out? I'm going to make them today or tomorrow.
