I made this last night (J/F '01) from the 30 Minutes or Less article. Everyone really liked it (even the President of Picky Eaters Club!), definitely a repeater. It was spicy and next time I might remove most of the chile seeds. I would also probably serve it with rice next time.

I'm glad to hear about this review since I bought out the store of the chipotles w/adobo.
Was the picky eater a little kid? I made the Chipotle Chicken Stew from the Make Ahead issue and it was too spicy for my boys.

Though he sometimes acts like he's two years old, he is in fact 13 (14 in April). He really doesn't like most spicy foods but this one past the test.

I'm also glad to hear the good review. I just ordered the chipotle chiles from ethnicgrocer.com and can't wait until they arrive. I've got several recipes lined up to use them in.

i also made the chicken chipotle --we loved it--my son said you'd have to pay $10 for a plate of this in a restaurant. sometimes it is just some little thing one does to a receipe that screws it up.

I tried this last night too!! I had to search high and low for the peppers but it was worth it. A really tasty meal. I only used 3/4 of the pepper and it was a perfect amount! (still way too hot for my daughter who is 16mo) Those things are really hot.
Now I have to make more recipies quick because I have a whole can of peppers to use up!! Does anyone know how long they will last in the refrigerator once opened?

They keep well in the fridge and freeze wonderfully. I've been using the same can for a few months now one at a time. http://www.cookinglight.com/bbs/wink.gif

Isdesign, I also made the Chipotle chicken stew. Hubby and I were disappointed; a little too hot for me; he didn't mind the heat, but said there wasn't much flavor apart from the hotness. Thank goodness I halved the recipe, or we'd have a ton of it!

I'm glad I'm not the only one that thought it was pretty spicy. DH and I have a high tolerance, but even he thought it was pretty spicy. No way our daughter would eat it (20 months). She had plain chicken and noodles with tomatoes. I'd fix it again, just not as many chiles this time.
