Yum! The sweet corn and smoked mozzarella were a nice contrast. I did use more than 1oz of cheese (probably more like 3oz:o ), and I used egg beaters instead of egg whites and whole eggs, but otherwise made the recipe as written. It was superquick and easy to throw together, too. While the corn was sauteing, I mixed the other ingredients together.

I served this with a green salad and whole grain toast.

Thanks Claire I've been wanting to try this but everytime I get corn I want to eat it right away:rolleyes:
I need to buy twice as much, that way I can have my cake and eat it too!:D

I also want to make the cornbread that was "lightened up" recently.

I made this too. Very tasty! I think I had an issue with the texture of the corn (I would cook it more next time) next to the softness of everything else. But it had all my favorite flavors in it, so who can complain?! (and what a calorie friendly meal! LOL)

I also used smoked gouda since I couldnt find smoked mozz. at my store.
