Last summer, I made a Cooking Light dish several times to the delight of my husband, our family and friends, and now I can't find it. The main ingredients included turkey sausage, pasta, red peppers (not roasted), feta cheese, and black olives. It was an extremely easy recipe to make and I am terribly disappointed that I can't find it either in my huge pile of recipes nor in the list of Cooking Light recipes on website. Can anyone help me?

Is this it? It doesn't have feta or olives but maybe you just added them? I think I made this before and it was yummy!

Penne with Italian Turkey Sausage and Vegetables

1/2 pound hot Italian turkey sausage
Cooking spray
1/2 cup chopped red onion
1 garlic clove, minced
1 cup mushrooms, quartered
1 small red bell pepper, seeded and cut into 1/2-inch strips
1 small yellow bell pepper, seeded and cut into 1/2-inch strips
1 small zucchini, halved lengthwise and sliced
1 (14.5-ounce) can diced tomatoes with basil, garlic, and oregano, undrained
1/4 cup fat-free sour cream
4 cups hot cooked penne (about 1/2 pound uncooked tube-shaped pasta)
1/4 teaspoon black pepper

Remove casings from sausage. Cook sausage in a large nonstick skillet coated with cooking spray over medium-high heat until browned, stirring to crumble. Add onion and garlic; sauté 2 minutes. Add mushrooms, bell peppers, and zucchini; sauté 5 minutes or until vegetables are tender and sausage is done. Stir in tomatoes; cover and cook over medium-low heat 10 minutes. Remove from heat; stir in sour cream. Add pasta and black pepper; stir well. Cook over medium-low heat 3 minutes or until thoroughly heated.

Yield: 4 servings (serving size: 1 1/2 cups)

Actually, this may be what you were thinking of. . .

Orecchiette with Sausage, Peppers, and Feta

8ounces uncooked orecchiette pasta
1 tsp oil
3 cups (1/2 inch thick)slices red bell pepper, each cut in half crosswise
1/2 tsp salt, divided
8 ounces of turkey italian sausage
1 tsp dried oregano
1 garlic clove, minced
3/4 cup (3ounces)crumbled feta cheese
1/4 cup sliced kalamata olives
1/4 tsp freshly ground black pepper

cook the orecchiette according to package directions, omitting salt and fat. Drain the pasta in a colander over a bowl, reserving 1/2 cup cooking liquid.

Heat oil in a large skillet over medium-high heat. Add the bell pepper and 1/4 tsp salt; saute 2 minutes.
Remove casings from the sausage. Add the sausage, oregano, and garlic to pan, cook 4 minutes or until sausage is done, stirring to crumble sausage. Add pasta, reserved cooking liquid, 1/4 tsp salt, cheese, olives, and black pepper, cook for 2 minutes or until thoroughly heated, stirring frequently. Yield 4 servings (serving size 1.5 cups)

That's it! I couldn't find it anywhere on the website and don't know what I did wrong. It's such an easy recipe I should have remembered it, but I'm certain I wouldn't have remembered the oregano.

My husband and I thank you very, very much.

You are most welcome (and welcome to the board)! I didn't find it on the website either. Found it doing a search on the bulletin board. Got lucky, though, because sometimes they don't always work.

Actually, I'll probably be thanking you after this weekend because may try it myself. Looks fabulous!
