A few weeks a go I made Giada de Laurentis's Grilled Tuna with Basil Pesto and it was wonderful. I enjoyed it so much I'm planning to make it again this weekend. Here's the recipe:
Grilled Tuna With Basil Pesto Recipe courtesy Giada De Laurentiis
Show: Everyday Italian Episode: Seafood Feast
2 (2-inch thick) tuna steaks (about 1 pound each)
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 garlic clove, peeled
2 cups fresh basil leaves
1/4 cup toasted pine nuts
Salt and freshly ground black pepper
1/2 cup – 3/4 cup extra-virgin olive oil
1/2 cup grated Parmesan
2 tablespoons lemon juice
Preheat grill to 400 degrees F.
Wash and pat dry the tuna steaks. Season with salt and pepper and brush both sides with olive oil. Place tuna on hot grill and sear each side for 2 minutes for rare. If you prefer well done, cook the tuna an additional 2 to 3 minutes per side. Remove from skillet and let it rest.
Into the bowl of a food processor, add the garlic, basil leaves, pine nuts, salt, and pepper. Pulse until finely chopped. With the blender still running, slowly pour 1/2 cup of olive oil. Check for a thick, yet smooth consistency, adding more oil if necessary. Transfer to a bowl and stir in 1/2 cup Parmesan.
Slice the tuna across the grain and on a bias into 1/2-inch thick slices. Place the slices on a serving plate and drizzle with lemon juice. Sauce tuna with pesto.

Yup, we love this one! It's easy and really allows a good fresh piece of tuna to shine.
Grilled Tuna with Herbs
The New York Times Cookbook
4 (1-inch-thick) tuna steaks
salt and freshly ground pepper to taste
1/4 cup olive oil
1 tbsp minced fresh garlic
1 tsp chopped fresh thyme, or 1/2 tsp dried
1 tsp finely grated lemon rind
1/4 tsp crushed red pepper flakes
2 tbsp butter
2 tbsp freshly squeezed lemon juice
Preheat an outdoor grill or preheat the oven broiler to high.
Sprinkle the tuna pieces on all sides with salt and pepper.
Combine the oil, garlic, thyme, lemon rind, and red pepper flakes. Blend well and brush the fish all over with the mixture.
Scrape the remaining oil mixture into a small saucepan and add the butter and lemon juice.
If the fish is to be cooked on an outdoor grill, place the pieces directly on the grill. Cook, turning often, 5-6 minutes. If it is to be cooked under the broiler, place it in a dish about 2 inches from the heat source. Leave the broiler door partly open. Let cook 3 minutes and turn. Cook the other side 2-3 minutes.
While the fish is cooking, heat the oil and butter mixture over low heat and keep warm. Put the steaks on individual plates or on a platter. Pour oil & butter mixture over the fish.
Serves 4.
We love this with good tuna! It's truly delicious.

GRILLED TUNA WITH TUSCAN WHITE BEANS
Recipe By :
Serving Size : 4 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
3 tablespoons olive oil
1 medium onion -- minced
2 cans small white beans -- drained and rinsed (15 ounces each)
2 cups chicken or vegetable stock
2 large garlic cloves -- pressed (2 to 3)
2 bay leaves
2 teaspoons salt
2 teaspoons fresh-ground black pepper
1 1/2 cups extra-virgin olive oil
1/2 cup red wine vinegar
1/2 cup fresh basil leaves
2 garlic cloves -- pressed
4 tablespoons water
2 tablespoons Dijon mustard
1 teaspoon salt
2 teaspoons fresh-ground black pepper
4 tuna steaks (~2 pounds) -- each about 1 inch thick
Vegetable oil
Ground white pepper
2 red-ripe tomatoes -- cut into wedges
2 lemons -- cut into wedges
2 tablespoons chopped fresh parsley -- (2 to 3)
2 tablespoons chopped fresh basil -- (2 to 3)
To make the beans, warm the oil in a large saucepan over medium heat. Add the onion and saute until soft and transparent, about 3 minutes. Add the beans, stock, garlic, and seasonings. Bring the mixture to a boil and them simmer, uncovered, for 30 minutes, stirring occasionally. Remove the pan from the heat and allow the beans to cool to room temperature. Taste the beans, adjust the seasonings, and hold at room temperature until serving time.
To make the dressing, combine all the ingredients in a blender. Blend well and hold at room temperature until serving time.
Preheat the grill for 10 to 15 minutes, with all the burners on high.
While the grill is preheating, rinse the tuna with cold water and blot it dry. Rub a little vegetable oil on both sides of each piece and dust each one with white pepper. Coat a hinged wire grill basket with nonstick cooking spray and place the tuna inside.
Once the grill is hot, turn the burners to medium-high. Grill the tuna for about 5 minutes per side, turning it once. When done, the fish will be only slightly translucent in the center.
To serve, use a slotted spoon to place the white beans on a large serving platter. Break up the grilled tuna into chunks about 1-1/2 to 2 inches in diamater. Pour the dressing over the tuna, spilling some dressing on the beans. (You may have more dressing than you need, but in the case it's better to have too much than too little--especially if there are any leftovers.) Garnish the platter with the tomatoes and lemons, and sprinkle the parsley and basil all over.

NOTES : This is extremely yummy, as long as you have good tuna. Tried it once with frozen tuna steaks from TJ's...not worth it.
This makes a lot of dressing; you'll have a lot left over.
