I am hoping someone has a recipe for "rolled sugar cookies". I have tried several and the results have been okay. I am hoping for one that is tried and true. Thanks everyone!!

I have one that I will post tomorrow (Thursday). It has been a no-fail recipe for me, and my coworkers always beg for these. In fact, I just brought some in for Valentine's Day. They were a huge hit.

A couple of things that I do differently is roll them out fairly thick so they are very soft, and I always cool them on brown paper rather than cooling racks, which also keeps them softer.

My roommate and I just made some this week. We usually make them for every holiday, so I would definately call this a tried and true recipe. I am at work though and can't remember all the measurements off hand. I will post it tomorrow......if I can remember to bring it!

If you like a soft cookie, try the one that is in the Betty Crocker Cookie Book. Its called "Mary's Sugar Cookies" and its made with powdered sugar, not granulated. It also has to chill before you bake. If I wasn't so lazy, I'd run downstairs and get the book with the recipe.....

Cooking Light actually had one in the Dec. '99 issue, I think. I know it was around Christmas in 1998 or 99, because I recall a picture of a Santa eating one. They were in Christmas shapes. I also have 2 other recipes that are fairly low in fat that I will post. (In general, to get reduced fat in basic rolled sugar cookies, look for a recipe with no more than 1/2 cup of butter for every 2 or 2 1/2 cups of flour.)

Sugar Cookie Cutouts

2/3 cup margarine or butter
2 cups all-purpose flour
1 egg
3/4 cup sugar
1 tablespoon milk
1 teaspoon baking powder
1 teaspoon vanilla
dash salt

Beat margarine or butter with an electric mixer on medium to high speed for 30 seconds. Add half the flour, the egg, sugar, milk, baking powder, vanilla and salt. Beat till thoroughly combined. Beat in remaining flour. Cover and chill for 3 hours.

On a lightly floured surface, roll half of the dough at a time 1/8 thick. Cut into desired shapes with a 2 1/2 inch cookie cutter. Place on an ungreased sheet. If desired, sprinkle with sugar and cinnamon. Bake in a 375 degree oven for 7 to 8 minutes, or till edges are firm and bottoms are very lightly browned. Cool cookies on a rack.

If desired, frost cookies with powdered sugar icing.

As I mentioned in my post yesterday, the changes I make to this recipe are:
- roll a bit thicker than 1/8 inch
- bake until firm - don't brown edges or bottoms
- cool on brown paper

Amount Measure Ingredient -- Preparation Method

1 1/2 sticks Butter -- room temperature
3/4 cup Crisco
2 cups Sugar
4 Eggs
2 Tbsp Vanilla
1/4 tsp Lemon Extract
2 tsp Baking Powder
5 cups Flour

Cream butter and Crisco until light and fluffy, several minutes. Scrape bowl and add sugar, continue to cream until a very pale ivory color, another 3 - 5 minutes.

Add eggs one at a time, allow each to incorporate before adding next addition. Scrape bowl, add flavorings and baking powder.

Stir in flour, adding extra flour if dough is sticky.

Wrap tightly in saran and refrigerate 12 or more hours, or freeze.

Preheat oven to 350.

Divide dough into thirds. Roll one piece to a rectangle 1/4" to 3/8" thick on a lightly floured surface, turning and adding a dusting of flour as needed.

Cut into shapes and bake 350º 2" apart on lightly greased or parchment paper covered sheet pans until edges just begin to turn golden (7+ minutes).

Allow to cool on pans completely and then remove.

This recipe is a little different than the other ones posted, so here it is. This is from a Kansas City Junior League cookbook:

Sugar Cookie Cutouts

1 1/2 c sifted confectioners' sugar
1 c butter or margarine, room temperature
1 large egg
1 t vanilla
1/2 t almond extract (I don't use)
1 t baking soda
1 t cream of tartar

Cream butter and sugar together. Add egg and extracts; beat till light and fluffy. Combine dry ingredients and add to batter. The recipe says to refrigerate at least 3 hours, but I never do. Roll dough to 1/8" thickness and cut out shapes. Place on lightly greased cookie sheets and bake at 375 degrees for 7-8 minutes.

This dough is a little sticky, so you need to be generous when flouring the rolling surfaces. I use half flour and half powdered sugar, which makes the rerolled cookies less tough. I can definitely vouch for this recipe, since I recently finished making about 200 little cookie hearts with it!

Here is my recipe for rolled sugar cookies, which is reduced somewhat in fat from most others. It is similar to CL's I had mentioned.

1/2 cup (1 stick) softened butter
1 cup sugar
1 egg
1 1/2 tsp. vanilla
2 tbsp. milk
2 1/4 cups flour
1/4 tsp. salt
2 tsp. baking powder

Beat together first 5 ingredients until light and fluffy, and stir in remaining ingredients. Chill dough 2 hours or overnight. Heat oven to 350 degrees. Roll out dough on floured surface and cut into desired shapes. Bake on a greased or parchment-lined baking sheet 8-10 min. depending on size.

Another recipe even lower in fat:

1/2 cup (1 stick) unsalted butter, softened
1 cup sugar
1/4 cup light corn syrup
1 egg, lightly beaten
1 tbsp. vanilla
2 tbsp. lemon juice, if desired
2 3/4 cups flour
3/4 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt

Beat together butter and sugar until crumbly. Beat in next 3 ingredients and lemon juice, if using, until light. Combine the remaining ingredients in a separate bowl, and add to the creamed mixture. Chill dough 2 hours or overnight. Using only 1/4 of the dough at a time, roll on a floured surface and cut into desired shapes. Place on greased or parchment-lined baking sheets, and bake at 375 degrees 6-10 minutes depending on size. Frost if desired.
