My friends and I get together once a month to weave baskets. I need help coming up with a lunch menu, which I can prepare the night before or quickly the morning of that day. We have had stratas, turkey barbecue, and a soup. It will be at a friend's house, I have to take it there, I can use her oven/microwave if necessary. I look forward to your wonderful suggestions!! TIA

Some of the CL recipes I've made for lunches to tote to work would do well for a group. The best (the ones where my co-workers came over to ask what I was having and tried the recipes themselves) were the pasta with the artichokes and black olives, the chile cheese bake with the bulgar from a couple of issues ago and the jumbalaya with anduille sausage and shrimp. I make the recipes, separate into my Gladware containers and refrigerate or freeze.

Some ideas could be pizzas, chicken caesar salads, other salads, wraps, deli tray ... I would bring most of the ingredients seperately and assemble at lunch time.

How about making some various finger sandwiches with fresh fruit. Maybe that's not too exciting but it would be different and could easily be prepared the night before. Just an idea. http://www.cookinglight.com/bbs/smile.gif

How about a calzone? That could be made ahead and then reheated for lunch.
Alittle lemon sobert after lunch....yum!

How about white bean chili or minestrone? Also, veggie sandwiches are always good.
Fajitas (they can be reheated in the microwave)

Thanks for the great ideas. I will have to mull them over, they all sound great!! The sorbet and fresh fruit will both be there. Hmmmmm... I am thinking something "Springy", perhaps the pasta with artichokes and olives.
We have five women who weave, so I don't need a lot of food, thank goodness.
I'd like to look at the April issue but someone hasn't delivered it yet...
