View Full Version : ISO Rockfish recipes

My FIL was lucky enough to go fishing yesterday and he caught a couple of rockfish. My MIL is not a big seafood eater so my DH and myself are the lucky benificiaries of my FIL's efforts :D . I have never had rockfish before so I'm not sure how to prepare it. Do any of you have any good recipes? I did a search and found one (sorry, I forgot to write down who posted it :rolleyes: ) from Legal Seafood with a garlic basil butter sauce which sounds good so that's a possibility.

Mmmm, rockfish.

Since it's such a nice, delicate, mild fish, but still has flavor, I generally don't do too much with it. I've broiled it with some herbs de provence sprinkled on it and a few dots of butter, or baked it with slices of lemon on top and some herbs. I like to serve it with some kind of rice or some roasted potatoes and on a bed of sauteed spinach.

It CAN be frozen as well, although the texture changes slightly.

Restaurants around here will serve it stuffed or topped with crab imperial, but I think that's overdoing it.
