a rotten banana & bread machine

I need to make my mother some breakfast bread and I'm dying to use this almost rotten banana. She doesn't like chocolate bread. I am out of new breakfast breads for her.

My stash of "goodies for mom" include: raisins, craisins, dried berry medly, almonds, walnuts & pecans.

Does anyone have a 1.5lb breakfast-type bread that's good? hey, I'll even take it sans banana!

If you have TWO rotten bananas, you have the makings of a GREAT banana bread....I have made it in my bread machine using the quick bread cycle. Banana bread......YUM!!!

I've never made this one, but it is from www.robinhood.ca, (http://www.robinhood.ca,) a flour company in Canada that has excellent recipes.

BREAD MACHINE BANANA BREAD

LARGE LOAF (1 1/2 lb/3 cup or 2 lb/4 cup machine)

1 1/2 cup sliced ripe banana
1/2 cup buttermilk
2 tbsp oil
2 tbsp honey
2 cup Bread Flour
1 cup Whole Wheat Flour
1 1/4 tsp salt
1 3/4 tsp bread machine yeast


Preparations

SELECT loaf size.

ADD ingredients to machine according to manufacturer’s directions.

SELECT White Cycle and Light Crust setting.

The combination of cranberry and orange in bread is wonderful. I often add about 1/2 tsp cardamom to cranberry orange bread. Takes it to the next level.
