View Full Version : Need BareFoot Contessa Chicken recipe!

I am needing a recipe from barefoot contessa, its the indonesian chicken recipe. She did it on this one episode with basmati rice and roasted carrots and then served cocunut cupcakes, YUM! I tried looking on foodtv.com but the recipe is expired, please someone help! I remember it had leg quarters,soy sauce,ginger and honey I can't remember the rest.

The recipe is called Indonesian Ginger Chicken, and is really delicious! I don't have my cookbooks here with me, otherwise I'd post the recipe for you. If it's not on foodtv's website, try doing a google search for it ~ you might just find it posted out there or check barefootcontessa.com ~ there are a few recipes posted there and you might find it. If that fails, I will post the recipe when I get home tonight.

Indonesian Ginger Chicken
1 c. honey
3/4 c. soy sauce
1/4 c. minced garlic (8 to 12 cloves)
1/2 c. peeled and grated fresh ginger root
2 chickens (3.5 lbs. ea.) Quartered, with
backs removed.

Cook the honey, soy sauce, garlic, and
ginger root in a small saucepan over low
heat until honey is melted. Arrange the
chicken in a large, shallow baking pan,
skin side down, and pour the sauce on the
sauce. Cover the pan tightly with alum. foil.
Marinate overnight in the fridge.
Preheat oven to 350 degrees.
Place the baking pan in the oven and bake
for 1.5 hours. Uncover the pan, turn the
chicken skin side up and raise the
temperature to 375. Continue baking for
30 minutes, or until the juices run clear
when you cut between the leg and the thigh
and the sauce is a rich dark brown.

I was wondering if I could get a review on this. I am dying to try it but am a little leary of the fact it has 1 CUP OF GINGER in it. I like ginger but A CUP? DH isn't too keen on ginger so am wondering if anyone has made this dish and if so, did you make any changes, like it as it or??? Thanks in advance.

I have made this recipe several times and we really like it. I've actually found that the ginger gets mellows quite a bit with the other flavors and isn't that pronounced. It just gets yummy!

The recipe actually only calls for 1/2 cup of ginger. I usually cut this recipe in half so I only use 1/4 cup of ginger. Most Barefoot Contessa recipes yield very large quantities of food so I usually halve them and still have plenty leftover unless I'm entertaining.
