I made this casserole because I love verenika's and had high hopes. The original recipe did not have light anything, was made with margarine instead of butter and did not have the onion topping.

The taste was not bad, but the texture of the dish was pretty bad. The cottage cheese stayed lumpy, so the casserole looked like very runny scrambled eggs.

Does anyone have any ideas how to make it with a more appetizing appearance?

Verenika Casserole

4 cups cooked noodles
24 ounces 1% cottage cheese
2 eggs
1/2 teaspoon salt
1/4 teaspoon pepper
3 cups cooked diced ham -- (3 to 4)
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
2 cups milk, 1% lowfat
1 1/2 cups light sour cream
2 thinly sliced onions

Mix cottage cheese, eggs, salt and pepper together in bowl; set aside. In skillet, melt margarine, add flour and salt stirring, then add milk; stir until thick and bubbly. Remove from heat; add sour cream. In 9x13 inch baking pan, layer 1/2 the noodles, 1/2 the cottage cheese mixture, 1/2 of ham, 1/2 of gravy. Repeat layers, ending with gravy. Bake at 350°F, covered with foil for 45 minutes or until done. Broil the onions until crisp and serve over the casserole

What about using pot cheese or farmer's cheese which have a firmer consistency.

Did you use small curd cottage cheese?

I'm not sure I know what pot or farmer's cheese is. I did consider the small curd cottage cheese but it only came in the full fat version. I probably should have pressed the cottage cheese through a sieve or something.

It's a good thing I didn't invite anyone to try it with me, it really is not a pretty sight.
