ISO: marinated pasta salad recipes

A co-worker and I went to a little Italian deli for lunch and had the best pulled chicken paninis and marinated pasta salad. So good in fact that I am trying to figure out how to duplicate the pasta salad at home. It was very basic but very delicious. It was penne pasta, some green spices (parsley?), had a tangy Italian/olive oil marinade and some very small pieces of diced artichokes hearts. Does anybody have a recipe that is anything remotely similar to this? The pasta just melted in your mouth because it was so soft from the marinade.
