From reading some of the recent threads, it would be great if CL could do future articles in the magazine on....
1) The impact that READING for pleasure has on our total well-being.

2) CAMP FOOD!!! Easy, delicious meals for all types of CAMPING!

3) More of great meals to MAKE ONCE & FREEZE for later!

What would you guys like to see in future issues??

I definitely agree with the idea of camping meals! Also would love if they would do some reviews of campgrounds.

I would also like to see some features on hotels or b&b's around the country (and Canada) and some recipes. I know this gets done a lot by magazines--but it is still good.

I would love some more lunch ideas! Meals that are quick and easy and mostly for lunch!

Another vote for freezer meals!

More ethnic articles with authentic recipes.

Reviews of appliances and gadgets.

Articles on interesting athletic events around the country. Marathons, half marathons, century rides, etc.

Articles on the different charities out there that train for events for fundraising--Joints in Motion, Leukemia Society.

Definitely agree with the idea of articles about reading. Maybe a group of people that read a book and sort of a book club review of it?

Profiles on athletic people. People who have overcome obstacles or have come up with innovative ideas for keeping in shape.

A contest for a trip to a spa? Better yet, send me to one and I will write a review....lol.

More famous (non-chef) recipes. I loved the feature they did on different writers and their recipes. That was so enjoyable.

I admit to wanting to see more substantive articles. I don't find the advice that I "need to make time for me" and "carve out a schedule" advice very helpful...like, duh?!?

Otherwise, I have to say, I do love the magazine, even if I seem critical here!

Since I am new to CL I am not sure if these have been done yet or not but,I would like an artical for using the crockpot for light recipes.
I would also like cold lunch receipes. Chicken Salads, tuna salads, ect.
BTW, I think the breakfast article was great!

I like hawkslady's idea of an article on lunches -- especially brown-bag (or thermos) lunches.

Also, how about an expanded vegetarian section? http://www.cookinglight.com/bbs/wink.gif And yes, more of the ethnic specials, as well as ... beans! (We knew that was coming, didn't we?)

Definitely more recipes for seasonal vegetables and fruits -- although seasons are different in different parts of the continent, aren't they? Oops. http://www.cookinglight.com/bbs/redface.gif

I hope the CL people read this thread because all of the above suggestions are great. I too would love more make ahead and freeze recipes or at least a notte with a recipe saying wheter it is a canidate for either.
As a vegetarian I do appreciate the Inspired Vegetarian articles but would like to see more in other articles- how about at least one for every theme?
Reading- yes. My reading thread proves thatt many people who love to cook also read- I just wonder if that is too far off CL mandate. I am sick of makeup articles and find time for yourself stuff!
The travel info is okay- but how about Canada??
I love profiles on real people, athletes etc.- very inspirational.

I agree w/ most of the above suggestions, also (except the "less cakes, pies, and cookies" -- sorry to disagree, Phoebe!!! http://www.cookinglight.com/bbs/smile.gif ) While I certainly don't make dessert everyday, I do enjoy making it occasionally, and I LOVE having lots of wonderful, delicious choices!

I may get BOO'ed right off this BB http://www.cookinglight.com/bbs/smile.gif but I was wondering what the rest of you think of this suggestion: how about JUST ONE recipe each issue that is NOT "light"? A place for those few exquisite, delectable recipes that truly would "lose a little something" in "lightening"? They could call that page "Sweet Indulgence" or something to that effect?

After all, while we all recognize that our health and fitness rely on eating light 99% (or so!) of the time... every now and then we all "splurge"! (I read this BB enough to know THAT!!!)

CL may hate the idea; perhaps they might feel that it contradicts or compromises their philosophy? But I personally think there may be a place for that within the magazine.

SO... what d'you think? Comments, anyone?!!

The title of the thread is quite a magnet, so I'm sure Maelynn will pop in and see what we've been hashing about.

As a seafood-only pseudo-vegetarian http://www.cookinglight.com/bbs/wink.gif , I too, would love to see more vegetarian recipes, including, Phoebe, more beans! http://www.cookinglight.com/bbs/smile.gif

I also love the lunches idea -- I love good, cold salads made with grains, pastas and beans.

CL already does quite a bit of this, but I especially love the articles that focus on one ingredient -- like the beets article! One on cheeses would be good, or various
greens.

And instead of all the make-up articles that I never read, I'd love to see some pieces on nutrition -- and I definitely wouldn't object to an expansion of the monthly wine column http://www.cookinglight.com/bbs/biggrin.gif

And Phoebe, I do agree...I get really tired of all the dessert recipes. Five a month would be plenty -- I clip them all out because they look delicious, but I really never make dessert. I think that the proportion of dessert recipes in CL is way out of whack when you consider how small a part it should play in our diets. I for one, am definitely not saying that dessert is bad, no, no, no, but practically speaking, I'd get a lot more use out of the magazine if some of the dessert recipes were replaced with something else.

I vote for freezer meals, cold lunches (transportable to take to work), more ethnic recipes and camping meals. Also I would like more equipment reviews. Great ideas from those who have posted and hopefully Cooking Light is listening.

Of course I'm listening! (OT) We love hearing your suggestions and ideas. Our magazine is a product of what our readers tell us, ask for, suggest, critique, etc. I was quite surprised when I started working here at how "close" we are with our readers. There isn't a day that goes by that someone here (an editor, kitchen staff, me...) doesn't speak directly with a reader -- answering a question or asking one. And that's one of the big reasons we're so excited about seeing some of you in June. To pick your brains! Anyway -- sorry, back to the topic...

All great ideas. Once you all are done with this thread, I'll send it along to the editors. Thanks for being so involved!

I just LOVE the idea of camp foods!!!
I also like the ideas of freezing foods. Dinners that are easy, healthy, and freeze well. I would also like suggestions on HOW to freeze the foods. Maybe I am just freezer-stupid, but sometimes I put things in there and....well, they don't come out just right.

I Really, Really like the recipes on desserts. I definitely have a sweet tooth, and if I can make desserts that are a bit lighter...all the better.

How about a bit on baking (or making) things that make the house smell really good?

Well, those are my ideas and two-cents worth so far. I really like the magazine. Keep up the good work!

I was looking through my March issue and realized how much I enjoyed it! I like the balance of all the different topics. I usually don't read the traveling articles near as much as the nutrition bits. I stopped subscribing to other food magazines because they seemed to be more like travel magazines with a few recipes.

I guess my only addition would be some of their 5-ingredient, 15-minute recipes! I love trying CL recipes, but since I get home from work at around 7:30 each night, quick recipes rule the house.

Lunch ideas would be great, too!

How about some "kid-tested" recipes? My kids are getting more adventuresome as they get older (they think calamari is "special chicken"--haven't had the guts to tell them the truth yet!!) but there are a lot of CL recipes that they would still turn their noses up at. I remember a couple of years ago CL did a piece where they redid a school cafeteria menu, and my kids liked almost all of those recipes. More articles along those lines would be great!

In the two years I've been reading CL from cover to cover, I've come to the conclusion that it's the best magazine on the market, and I can't wait for each issue...but I also subscribe to a few other mags that tell me all I need to know about relieving the stress in my life, (which basically adds up to ditching the hubby and kids and moving to Bermuda with Fabio's kid brother) and which aromatherapy candle will send my husband into a 'hormone frenzy' that will last all night long. From CL I want to learn all I can about this wonderful new hobby I've discovered in healthy cooking, and I want new recipes to try to make this hobby more exciting.

I love the idea of less desserts. I've got a sweet tooth like everyone else, but I'll make 7 dinners and 7 lunches to 1 Caramel Pecan Cheesecake. I need the help in the meal category more than the desserts!

I don't have very much freezer space that isn't taken up with raw meat purchased 'on sale', but I'd love to learn more about freezing foods, which foods should be cooked before freezing or after, that kind of stuff. When I DO talk my husband into that 20 cubic foot freezer on sale at Home Depot, I'd like to have ammo! (Honey, I've got all these great recipes for freezer food that would save us so much money if we had a freezer...)

I also think we need reviews on new gadgets and new equipment. Plus, one of the cornerstones of lowfat cooking is using lots of different herbs and spices. How about a spice page? Pick a spice each month that's a bit unusual (say cardamom) and give us the lowdown and some recipes to go with it? Most of us grew up with Moms that used salt, pepper, garlic salt and oregano, and anything else learned has been on our own! Teach me how to spice up my food without fat, and give me some really cool reason to try it!

OK, I think I'm done. By the way, after I subscribed to CL I cancelled my subscription to Cosmo...I no longer have to read monthly about the 23 different erogenous zones that drive my husband wild. All I have to do is make Vidalia Onion and Feta Risotto! http://www.cookinglight.com/bbs/tongue.gif

I agree with all the suggestions above - the camping food, crockpot, and lunches especially. And for lunches, it would be great if there could be ideas that don't use 1/2 cup of beans or something else that involves opening a can and throwing out the rest of it. I like making CL recipes for lunches, but many of them aren't really "adaptable" down to 1 or 2 servings. And on the dessert note...I agree that I would like to see far fewer desserts since I hardly ever make them. But I'd also like to see some dessert recipes for fewer than 12 people - most of the cakes, cheesecakes, etc. are for large numbers, and between the two of us we can't possibly eat all that without defeating the purpose of "cooking light" in the first place!!

I agree with camping food, lunches, crockpot, etc. But, my husband is a meat and potato man and I'll have to lure him into some of this "tofu" stuff I see so much in the magazine very slowly. So, I would like to see more average, everyday recipes. I also love to find a wonderful, lower fat and calorie dessert - so keep them coming. (Especially if hubby can't tell it came from CL!) Also, would it be possible for CL to add the WW points for each recipe????? Oh, one more thing - how about recipes for "empty nesters" - just two people. And, if CL can come up with a lower fat version of Alice Springs Chicken from the Outback, I'd be forever indebted!!

Okay, here is my fantasy.....A lot of wonderful ideas are flowing here. I agree with most of them except please do not shorten recipes for sweets...I enjoy baking. Right now I think there is a good balance of recipes for main entrees, sides, etc and the sweet tooth. My husband is also a meat and potato guy and very slowly I am experimenting with "something different" but using the beef, pork etc.

I would like to see less of fitness, makeup and incorporate more articles on some of the suggestions before me. How about a column from the Kitchen Staff with culinary secrets( with photos)....you know how visual I am http://www.cookinglight.com/bbs/biggrin.gif. The first article could be "How a recipe is born". Maybe a column every other month from a Staff Member sharing their favorite family recipe (with photos of course). Column on appliance/gadget (monthly) and its uses, recipes. The first one could be, "The Iron Skillet....Good and Bad of It" and recipes following it. http://www.cookinglight.com/bbs/smile.gif. Love the idea of spices, cooking out, lunches, freezer recipes and would love to see recipes for the "2 people family".

I would definitely like to see more crockpot recipes, and after this month, I realize I could do more with my microwave for quick dinners and would also like to see more of these recipes. I definitely like the amount of desserts included, since we have dessert in our home every evening. I don't particularly care for the idea of including a "non-light" recipe, since this is the reason I no longer get Bon Appetit, etc. It is hard enough to stick to our diets without being tempted. I would also like to see more meals put together into "total menus", which would make things quicker for me in planning for the week.

How about cookbook reviews? I realize CL would like people to buy their cookbooks, but what about reviewing 1 or 2 other ones each month? I get lots of tips on good ones from this board, but it would also be good to see in the magazine.

Also, one thing I like about Cooks Illustrated is that they have a Readers Tips section. People can send in time-saving, handy tips for baking, cooking, organizing kitchen stuff, etc. Some of them are pretty useful.

I would like some "chemistry" lessons to learn exactly what various ingredients DO in a recipe. This would be helpful to us if we want to experiment with recipes but don't want to take too many chances at completely ruining something.

Great thread!

I'm a poor grad student living alone so most of my suggestions reflect that.

1. More crockpot, microwave & freezer recipes (anything to save time!)
2. A story (or two!) on how to cook/eat well on a budget, including shopping and substitution tips. This would have recipes included.
3. More 2-serving recipes, including dessert.
4. "Light" duplications of restaurant recipes (like Outback's Aussie Cheese Fries or Wendy's Frosty), a la www.topsecretrecipes.com (http://www.topsecretrecipes.com)
5. More lunch bag/Thermos ideas -- including a review of and shopping guide for insulated lunch bags and Thermoses. It's really hard to find a lunch bag that is a) big enough and b) not purple and silver and designed like a mini-gym bag.

Hey, I LIKE the fitness stuff and all the dessert recipes (although I don't have the willpower to make them yet!).

Well, add me to the list of crockpot, freezer, two person recipes, 5 ingredient 15 minutes, gadget review. On the lunch idea, how about those that do need refrigeration and those that don't. And while I don't make dessert that much, I don't mind the number of choices I get.

On freezing, if you could add suggestions how to freeze, i.e. zip lock bag, tupperware, foil. I guess I'm freezer illiterate also.

One pet peeve I have is buying a can of something and only needing half of it. I almost inevitably toss out the other half. I know you can't always round ingredients out to even numbers though.

Count me out on the one non-light recipe a month. There are plenty of places to find full fat recipes if I want one. I come to CL to make them delicious and healthy.

As for adding WW points...I don't follow WW. I follow ADA, so I'd rather see the exchanges. I think it would be too hard to cater to one group. (Unless it's mine, of course http://www.cookinglight.com/bbs/smile.gif!)

I think that's it. Thank you CL for putting the whole recipe on one page. Many magazines don't and it's frustrating to have to turn to page (whatever) at the end of the magazine.

I would love to see more wine suggestions after a recipe like the ones in the Italian section this month -- or maybe even beer suggestions when appropriate. Maybe a way to expand the vegetarian selections is to have vegetarian options for some recipes. I remember Eating Well once had a rack of lamb recipe and then gave a vegetarian alternative with portobello mushrooms -- that kind of thing would be really helpful to those of us who are or usually are vegetarian. I agree with the freezer and lunch ideas, less and smaller dessert recipes, Reader tips, and less (or no) makeup tips (I have yet to figure out what makeup has to do with health or nutrition). Oh! And camp food -- great idea!

Less seafood- no mushrooms!! http://www.cookinglight.com/bbs/wink.gif just kidding. Yes, they do have to please everyone, but there are some excellent ideas here. I am more of a baker, too, so I would hate to see any reduction in the dessert recipes. I mostly make the dessert recipes.

While some of the Italian dishes are different, I find that most of them are not really extraordinary. Maybe because I cook alot of Italian dishes anyway? I'd like to see more interesting pasta dishes.

I love the camping food idea. Not too keen on the make-up articles. And I love the other suggestion of favorite recipes. I really like reading the little stories of where the reader recipes came from. It seems to add something to it and I usually end up trying those recipes.

I love Jewel's idea for a profile on different spices!

How about expand that to include tips on how to grow some of them? I am garden illiterate as well as freezer illiterate!

I also liked the idea for kid friendly recipes. As it is--I make CL recipes 3-4 days a week and that usually means that my youngest doesn't eat dinner 3-4 nights a week. Luckily he's a robust little gnome, so he doesn't seem to suffer from it--but I REFUSE to become a short order cook.

I would also like to say that I love CL's travel stories. My all time favorite was the one they did on the white river rafting outfit in Iowa (I believe?) that offers gourmet meals and a masseuse. That is on my travel to-do list and as god is my witness--I WILL do that trip sometime in the next few years!!!!

Count me in with the members who do not want to be tempted by high-fat fattening recipes. That is the reason I cancelled my subscription to Southern Living. I now cook mostly CL recipes and do not need to be tempted to "stray".

Also, keep those CL dessert recipes coming. We, of course, do not try every one they print; but it is nice to have several choices. I would rather bake than cook anything else.

More light crockpot, or quick and easy recipes would also be great.

However, I must say that CL is my favorite magazine and if they stay just the same, I'll be subscribing.

Let's up the anty on spices as well -- less bland, "safe" recipes, and more deep, flavorful and FRAGRANT fare...

I also think it would be interesting (as mentioned above) to intersperse a few gardening articles (particularly organic) here and there -- after all, growing fresh produce and herbs can be a big part of eating healthier and getting back to basics in our busy lives.

Since so many people mention their trouble finding ways to use up leftover ingredients, why not offer suggestions for using up that 1/2 can of chipotles...

First of all, I LOVE CL and would be lost without it. BUT, as long as we're airing our wish lists...

I agree with what many of you have already said, so I'll second the motions of:

1. One or two serving recipes. For those of us who are cooking for ourselves or one other person instead of a whole houseful.

2. Lunch recipes that will keep well for an entire week. This goes along with #1. I usually make a dish on Sunday that I will use as my lunch for the week. Sometimes, things get pretty strange looking by Thursday or Friday...Freezable recipes would work here as well.

3. Snacks! Easy to make, easy to take along to work or wherever.

4. BUDGET MEALS. Maybe some recipes with everyday ingredients would help here. Some of the recipes that I want to try have so many or hard-to-find items that it costs me a bundle to try them out.

Hope CL is listening to us....

Lots of great ideas here! I like the idea of smaller meals, lunch ideas, a pick-a-spice page etc.
I'd also like to add that I'd like to see more on nutrition (following the food guide pyramid, what aspartame does to the body and diet etc). I think many of the recipes could have a substitution listing. (ie the whiskey pork chops made with chicken. or can I make that with tofu?) I would also like to see more appetizers, especially ones that can travel. I live alone but do bring things to gatherings or to share with friends and family and the two things that rank high for that is appetizers and desserts.
After 6 years of reading CL and giving tons of subscriptions as gifts and joining a CL Supper Club, I do have to say, I'm very happy with the mag!

There are some wonderful ideas here! I would like to add my 2 cents worth: along with the camping ideas, I would like to see an article on home dehydrating as I make some pretty cool things with my dehydrator such as roasted garlic powder, tomato powder, not to mention jerky. Some more pressure cooker recipes would be great too as pressure cookers are great time savers.

I'm pretty happy with the magazine as is, but since you asked . . .
I'd like some reviews of kitchen appliances and gadgets -- I love reading the reviews on the BB, so when I make a purchase, I know it's a good product!
I'd like to join the crowd in asking for cold, lunchbox meals . . . both for me and for my 13-year-old daughter, who brings her lunch to school.
As a long-time subscriber, I remember a feature in the magazine from years ago -- it was on the last page, and was called "Downfall." It was an essay on goodies that otherwise healthy-eating people couldn't resist. Not quite what Lynn B was asking for, but I always loved that feature -- wouldn't mind seeing it back!

There's so many good ideas here it's hard for me to come up with any more. I will vote YES on more crockpot recipes. Also with today's busy lifestyle, I would like to see more quick and easy recipes. It would be nice to include more meal ideas, and please, give us suggestions on what to do with that can of chipotle peppers in my 'fridge.

It would be great if you could add both ounces and measurements to your recipe ingredients. For example, ½ cup chopped onions (4 ounces). Also, a picture of every recipe would be great! I love pictures....even a tiny picture. If you can't include all pictures in the magazine, have a "picture" section on the website. You don't have to post all the recipes, just the pictures. Also you need substitute suggestions when that hard-to-find ingredient can't be found. Again, use the website for this if you need to. The website is a great supplement to the magazine.

I agree with BevP---if you add WW points, you must add dietary exchanges.

I have subscribed to the magazine for several years and I really like it and still manage to get a lot out of it!

I'd like to see kitchen product reviews and recommendations on which recipes can easily be frozen. I like the articles which focus on a single food (like the beets article although I don't like beets). How about an article on the different kinds of cheeses (I know cheese is not low fat but a little goes a long way). I also like the cooking technique articles.

Wow -- so many great ideas! I agree with many of them --

1. I would love to see more crockpot recipes -- it's hard when you want to cook but are so busy during the week, and more ideas for the crockpot would really help.

2. More dinner and dessert ideas for two. Sometimes we love the leftovers, and they do make easy weeknight meals, but some recipes are so large that we end up eating them for a week!

3. I love the dessert recipes and don't think they should be reduced. I have a huge sweet tooth. http://www.cookinglight.com/bbs/smile.gif Like others have said, I don't make dessert every night, but it's nice to have a lot of ideas to choose from when I do.

4. I like the idea of focusing on one ingredient and giving a variety of recipes for it -- a cheese, vegetable, etc.

5. I love the CL travel articles and would like to see more of those.

6. I think camping food ideas would be fabulous! I always have a hard time thinking of what to take -- lists of "don't forget to pack" ingredients would be good too.

7. Snacks and lunches -- can't have too many ideas on these.

those are all great ideas, but I have another suggestion. My daughter is a senior in college (Texas A&M) and is trying to eat healthy. I have given here several recipes from CL, but she wants them fast and easy and without alot of fancy ingredients because she doesn't have them on hand and it gets expensive to have a spice she uses once. Anyway, she is trying to learn about carbs and proteins and less fat, etc. So, how about an article with recipes for the college kid or working singles that are fast, easy and lowfat? Thanks

I would also love to have more make-ahead (freezer) recipes and Crockpot recipes. The CL make-ahead issue at the holidays (this was a special issue you could buy, not a subscription issue) had some good freezer recipes and very good tips for freezing food.

Also, this month Southern Living has a "here are recipes and menus for a month of family meals" special feature. I would love to see the same sort of thing with CL recipes (although some of the SL recipes look quite good and reasonably low in fat/calories).

I have to go against the grain here and say that I like many of the beauty articles. I really enjoyed the "how to give yourself a manicure and pedicure" articles and I love the review of home spa products this month. I also enjoy reading about fitness.

This is one long thread, but since Maelynn plans to pass it along, thought I'd chime in. There are bunches of great suggestions here, but I guess my opinion is that CL should focus on what we read CL for. I've seen other threads on what ELSE we all subscribe to - and the lists tend to be long - Gourmet, Bon Appetit, CI, Wine Spectator, travel magazines, fitness magazines, etc. The other cooking magazines are where I tend to look for recipes for the special occasion, splurge meals. I turn to CL for everyday, quick, healthy eating. So I'd like to see more do-ahead suggestions, freezing tips, multi-meal suggestions (i.e, cook a batch of chicken breast and use it for 3 different meals). Crock pot cooking was an excellent suggestion, as was restaurant recipe makeovers. I also second the idea of fewer desserts and more complete lunch and dinner menu ideas.

Regarding other's suggestions...

Even though I do not camp, I can certainly see the appeal of wonderful, delicious, light "camp food"! I hope CL does that!

I also LOVE the idea of the addition of a note after each recipe saying, "freezes well", etc. GREAT IDEA!

And I truly HOPEHOPEHOPE that CL never decreases the amount of dessert recipes! Personally, I just LOVE those!

Anyway, I have another suggestion, too: (just one more!) Wouldn't an annual recipe index in the last issue of each year be wonderfully convenient?!!

1. How about "reviews" of convenience foods? Our local paper does that, and it can be helpful, although the editors don't necessarily focus on light convenience foods. Although I know many of us don't use a lot of pre-packaged stuff, almost all of us do from time to time. CL could analyze the sodium and fat content, and also suggest which brands taste best.
2. I second (and third, fourth, etc.) the calls for more on crockpot cooking, side dishes, and cooking for one/two. I also would prefer fewer desserts, as I rarely have the time to make desserts from scratch, and I try not to eat desserts during the week anyhow, light or not.
3. More articles on eating light/right in restaurants -- tips on portion sizes, healthier dishes, etc.
4. Perhaps restaurant reviews of major cities -- to sort of incorporate travel/food.

I'd like to see more menus and suggestions for 'go-alongs' for the recipes. I have a terrible time trying to decide what will go together for a meal and ideas would be greatly appreciated. I like your cookbooks that give meal suggestions for each recipe.

I also agree with more recipes for two and fewer desserts.

I was thinking since some people enjoy the fitness and beauty articles and some people don't, what about having the articles alternate every month. So you could have a fitness article one month and then a beauty article the next. That way there would be more room for recipes!! I love the thought of more crockpot recipes and would be thrilled to see more vegetarian meals too. I also think the suggestion made about giving side dish ideas is wonderful. Of course I love the magazine the way it is.

I'd like to say I LOVE Cooking Light! Everyone has great ideas, so good I can't think of any to add. So I'd like to say I agree with more microwave recipes (both meals and desserts). I know I don't utilize the microwave like I could or should. I love Mamasue's idea about the Kitchen Staff and their fav recipes and articles and recipes on kitchen gadgets and appliances.
And keep those yummy dessert recipes coming! I love to bake!

I agree with many others who have suggested to have more crock-pot recipes and make ahead (fridge or freezer) recipes. I too find that I have little time to assemble an entire meal when I get home from work, and if I attempt it, we often don't eat until after 9pm! I would even appreciate tips on what portions of a recipe could be done ahead (shred the cheese, cook the pasta, cut the veggies, then assemble the night you cook it, etc.).

I also really like the idea of camping foods and even BACKPACKING foods! My husband and I love to backpack, and we usually resort to bringing the freeze-dried packets of food, because they're convenient and lightweight. But I would really like to have ideas I could take along that wouldn't be too difficult to carry or put together in the back country with just a small propane burner. I realize I am probably a minority with that request, but even one recipe would be greatly appreciated!

I also enjoy reading the fitness articles and don't want any of the dessert recipes to go away. Though I don't always do all of the workouts mentioned, and I don't make a good number of the desserts, just having them there gives me lots of options when I'm looking for something new to try.

Keep it up Cooking Light! This is definitely my favorite magazine, and I recommend it to all my friends (or sometimes give them subscriptions)!

Wow: A Great Thread! About the only thing I can think of is an article on how some of the supper clubs are going. Ours has been meeting on a monthly basis since last Aug. We've tried many foods that we wouldn't perhaps otherwise have. And I've gotten introduced to a pizza stone and bread machine through our club. Four of us (we have nine in the club) will be going to Birmingham. How's Amy Fong's club doing?

I have to say that I enjoy the soup recipes. I'm with the vote for more kid stuff, and more recipes in smaller portions, and nix the makeup articles.

I love CL, but I really must say many of the recipes are either too fussy, too time-consuming, have too many special ingredients that you only use a portion of and never will use again, or are just plain NOT LIGHT. I follow Weight Watchers and you cannot tell me that a recipe with, for example, 380 calories and 11 grams of fat per serving is light (I'm pulling that out of the air, but I have seen nutritional breakdowns that give me red flags).

I generally agree with Ohian except I DO like the exercise articles. I like the articles that focus on a single food. I would really, really like more recipes that I can whip up after work with less than 8 ingredients, and that are really LIGHT. And no, I don't want one "heavy" recipe per month, I think many CL recipes are already getting heavier - as is America. What am I going to do with the rest of a pint of heavy cream after I use the 1/4 cup in a so-called "light" recipe? It's not feasible.

What I'd like to see more of:

Love the ethnic recipes and "cooking schools" but please make one or two recipes with less ingredients;

As a fan of the vegetable focus series (i.e., beets) - with the forecoming summer I'd like to see articles devoted to an individual herb such as basil;

Continue and expand upon focus on healthy fruits, veggies and vegetarian cuisine in general (but again, less fussy recipes please)

Would LOVE more fish/seafood ideas;

Agree with the suggestions on flagging good "make aheads/freezes well" and especially crockpot recipes;

Is the Well Equipped series on the website? I searched for the clay pot ideas here and couldn't find it.

Keep up the fitness articles. They are appropriate and well orchestrated. CL readers are fortunate to have Gin Miller as a guide. America needs to be reminded to get up and move, especially when planning dessert seems more important than a healthy dinner.

I definitely don't think that CL's recipes are too "heavy" at all. I want to eat healthy, not austerely! I am in this (lifestyle) for the long haul!

If a certain recipe is a little higher in fat and/or calories than others, then I just enjoy it, knowing I will need to be a little more "aware" of what else I eat the rest of the day, etc.

Bottom line: I think CL does a wonderful job of providing us with a vast array of delicious food that we can live with, every day.

I agree with Lynn. I am using the dietary exchanges to lose weight, and there hasn't been a single CL recipe that I haven't been able to enjoy and still "count". You just have to made adjustments the rest of the day to accommodate the heavier meal. I am in this long-term, and there are no forbidden foods as far as I'm concerned.

I guess the only thing on my wish list are more notes about how to go about preparing this ahead of time. I LOVED the Make Ahead Supplement for that very reason. I di notice in this months issue they did it with the Baked Ziti. There was a note at bottom with the make ahead tips. That was great because I made it yesterday and just have to cook it tonight!

What great ideas. I agree with others on the crockpot ideas, make ahead ideas and camping food. I would like to see more family oriented meals that my picky children would eat. How about some recipes for parents and children to make together to start an interest in healthy eating early. Also skillet dinners that could be made quickly after a long day at work. I like the idea of 5 ingredient 15 minute meals. Also how about making for example a beef mixture that can be used for a variety of meals. I would like to see a week of menus planned with the recipes in that issue and the grocery list to boot. The hardest thing after deciding what to cook is what to put with it and getting the ingredients. Sorry this is so long but once I got started I could not stop. However, even with all of these ideas I have to say that Cooking Light is my favorite magazine. It has only gotten better through the years. Thanks Cooking Light.

This thread has gotten so interesting, and I've loved reading everyone's comments, so now I can't help but respond to a couple of things I've read:

First off, Kentgirl, I love your idea of providing weight measurements of ingredients (produce particularly). Sometimes I do a pretty good job of estimating how much of something equals a certain amount, but occasionally I'm way off.

I saw a couple of references to recipes focusing on smaller numbers of servings: I cook for myself all the time, and I never have a problem with cutting a recipe in half or by a third. I'm not exactly a do-math-in-my head kind of gal, but I rarely even find myself having to use a pencil and paper or a calculator to figure out fractions of ingredients -- there's no need to waste food -- just cut down on the recipe to begin with! http://www.cookinglight.com/bbs/smile.gif

One last thing http://www.cookinglight.com/bbs/smile.gif I think that although CL has perhaps become less stringent about the percentages of fat and sometimes the amount of calories in their dishes, I strongly feel that that's a good thing. I think I can safely say that almost all of CL's dishes fall within the 20-30% fat range, and the calories per dish are by no means extravagent, at least in most cases. Besides, I know that I've seen more than one complaint from BB'ers protesting that some of the serving sizes simply aren't satisfying enough. And I promise I'm not trying to pick on anyone here, http://www.cookinglight.com/bbs/smile.gif but just for reference, a dish with 380 calories per serving and 11 grams of fat, while not puritan, is certainly light, especially when you consider how many calories you should be getting in a day (around 2,000, if you're a regular exerciser and not trying to lose weight) and fat grams (30-60, depending on your preferences). Another one (and I'm totally biased here), I would have LOVED to have seen an article on pregnancy nutrition, and maybe some easy recipes that help meet a pregnant woman's nutritional needs without requiring a lot of prep time (since we're so darn tired and all).

This has been a great thread! But as I read I'm torn. While I definitely appreciate the benefit of recipes that aren't "fussy," I have to say that my experience of CL this time around (I re-subscribed in 1998) as opposed to previously (92-95) is that the recipes are so much more interesting. I love recipes that use chipotle chiles, lemon grass, seitan and other "exotic" ingredients. CL has really improved in this area, and I'd hate to see it go back to the more hum-drum things I think it used to have (IMHO). However, I think there is a compromise. Dishes like the Malaysian Lime Coconut Swordfish (which is now my favorite CL recipe I think) are both interesting, creative and easy. And, CL gives a suggestions for a substitution for the lemongrass that some people may not be able to get (or afford, in my case).

I agree with the cold lunch ideas, crock pot meals, light versions of ethnic dishes. Also would like to see whole meal suggestions (and recipes to carry them out) not just for everyday but for holidays and special days and theme parties. I also would like to see more dishes for 2. I like the cooking gadget idea, maybe "Gadget Corner" or "Kitchen Counter" something along those lines. It would be great, too, if they could show some neat table arrangements (different dishes, serving pieces, utensils etc, handy AND decorative) and list places that you could get these and maybe some of the hard to find ingredients. Such as websites or mail order houses. Step by step instructions with pictures that are so great in their cookbooks would be nice to see more of in the magazine, too.

I would also like to see some articles on freezing certain foods (what can be frozen, how long, etc.)and meals you can assemble a day ahead. I would also appreciate some tips about how to plan meals in advance(what to buy, when to shop).

I like Jewel's idea on spices. When you're cooking light spices are important. A featured spice each month with recipes would be a great addition.
More crockpot recipes with everyone's busy lifestyles would be appreciated too.

I also agree with emilycat's comments about "light" cooking -- I think the quality of CL's recipes has improved as the magazine has gotten less stringent about their nutritional requirements.
My request is that they try not to publish recipes back-to-back on pages. I'm a recipe clipper and it's a real bummer to have to choose between two good-sounding recipes!
Also, I would love taste tests on some light convenience foods -- a la the ones in Cooks Illustrated.
Finally, if CL is publishing an article using special kitchen equipment, it would be nice to include instructions on how to prepare that recipe without that equipment. As an example, I had to toss the recent bread machine recipes as I don't have a bread machine nor do I plan to buy one. There's no reason those breads couldn't have also been prepared conventionally.

My number one request? Make it a 12-issue year!!

I also have a few "repeat" requests:

dessert recipes for two,

freezing (someone mentioned have a "master base" for something like chicken and then 3 things you could make with that...awesome idea),

have a menu-for-a-week (with lunch and breakfast would be nice, but I just a week of suppers is also nice), include things like a shopping list, what could be prepared ahead of time/time-saver tips and also well thought out so that "half a red pepper" I used on Monday gets used up on Thursday.

Special features on kitchen tools with recipes (fondue, crockpot, juicers, pressure cookers). In addition maybe help out readers if they want to buy those things (compare some popular brands and/or what to look for when buying)

spice/herb of the month. In addition to recipes; growing and freezing tips.

vegetable and/or fruit of the month. Also with freezing tips (so we can enjoy those asparagus in November)

I think someone mentioned something about "how a recipe is born at Cooking Light" I like that idea. Included in that feature could also be an "inside look" at a food-photo shoot.

In addition to the reader recipe that you "lighten up" once a month....maybe also a restaurant recipe (that you choose, or someone requests) that you "lighten up" as well.

Develop some kind of system, as someone mentioned, of which recipes freeze; in addition add a "feezer recipes" list to your index at the back of each issue.

Well, having said all that, will you believe me if I say CL is my favourite cooking magazine?? Keep up the great work!!

I also love the ideas of product reviews and features on spices or ingredients. Maybe you could feature the dehydrator as your "well-equipped" product of the month? I borrowed a friend's and am amazed at all the stuff you can do with it! Vegetarian/bean recipes sound good too.

Finally, I think there should definitely be an article about our visit to CL this summer! Kind of like the supper club article! That would be cool. Thanks for listening to all of us!

I love the suggestions everyone has been giving. Here is what I would like to see:
Occasionally, some recipes for those of us who suffer from food allergies. I just found out I am allergic to yeast, milk, malt and soy. WOW. I don't know if it will make me really change my eating habits or not. But some recipes for those with special diets would be nice!
I also agree with the more lunch ideas (to take to work) and the freezer tips.

Something else that I think would be VERY helpful (as least to me anyway http://www.cookinglight.com/bbs/wink.gif ) would be suggestions (with each main course) for side dishes or accompaniments to go with dishes (besides a salad). I tend to get burned out on salads and I have a terrible time coming up with side dishes other than frozen veggies with butter. In past issues, I've only seen this done with only a couple items per issue.

Of all the magazines I subscribe to (and there are many!) CL is hands down my all time favorite!

I think the suggestions on this board - and in fact, the mere presence of this board - TERRIFIC! And I think that it is so cool that the editors of CL care about what we want in "our" magazine.

I'll read anything CL prints - and this month I found the spa products reviews really great, and the idea of taking 24 hours off, just for me - well, just what I needed. I save my back issues and find terrific stuff that maybe I missed the first time - or I wasn't in the mood for beets that month.....what a treasure!

My hat is off to you CL editors and staff! You do a fantastic job and a great service to us all! Thank you Thank you Thank you (and please keep the cookies, pies and cakes coming...they are my favorite part of any meal!)

There have been some great suggestions on this thread that I'll just ditto. I'd also like to see more one-pan recipes, so that I don't have to dirty an entire kitchen full of pots, pans, and dishes to make one meal. Also, how about an article on must-have kitchen gadgets/tools? I'm sure there are lots of gadgets and tools that would make cooking easier, but I just don't know about them or don't have a clue how to use them effectively. And since someone mentioned clay pot recipes, how about some plank recipes too?

Okay, I have to weigh in.

I say No to the non-light recipe. I already subscribe to Southern Living and don't need more temptation.

I say yes to more crock pot and "light and easy" meals.

I also like the recipes that focus on one ingredient. As someone said, it is helpful to learn about the chemistry of that ingredient and how to cook it. I agree more "how-to's" "cooking class" type articles would be great.

I agree about less make-up and "how to de-stress your life" articles. The latter are never anything like the life I lead and, therefore, I find them laughable. The people seem to have endless time and money and no kids or house chores.

Maybe a section called the "farmer's market", emphasizing what is fresh in the farmer's market that week/month and concentrating on its nutritional value, how to cook it, recipes, etc.

Also, especially for vegetables, I would like to see more simple recipes. If you are using fresh, in-season vegetables, often the simpler you cook them the better they are for you and the easier to get to the table. I was looking through my "CL veggie file" last night, as I am cooking an easy entree and was looking for a veggie, thinking, "it is too bad I can not cook two new dishes a night, but the recipes for veggies are so involved, I can't handle both and a 2 year old too". When using really fresh veggies, I often only need to know what herb to toss them with, or sprinkle over them while steaming, etc. I have a Martha cookbook called "Quick Cooks" that has many such recipes, but they are not light! Help.

I agree with the chemistry of cooking comment.

Please, please, please keep up the "Back to the best". When I get my new book, I often turn right to the end to see what my "must try" is for the month!

I have to jump in here, I agree- keep the exotic and unusual in the recipes! I don't read CL to get ideas for how to make plain rice and steam some broccoli. I also stopped subscribing in the early 90's when CL was much more restrictive on the "no-no's" ingredients. Now, I have renewed my subscription. BTW, I am on Weight watchers also and have found very few CL recipes that I don't include in my program.

Here's a new idea: how about an article on easy tips or ideas for beautiful presentation of a few meals, with photos and recipes to illustrate? You know how some restaurants make your food look like a piece of artwork sitting on the plate? Or certain food colors that look beautiful together? Like red bell peppers with bright green beans, etc. I would really like some ideas on that for very special occasions.

I particularly like the ideas for:

*more cook-out recipes
*camping recipes, especially the "don't forget" list
*freezer foods--also, maybe for recipes that can be made ahead, either all or in part, add a "stop here to freeze" a' la Peg Bracken's "I Hate To Cook" Cookbook.
*I love Jewel's featured spice idea
*Puhleaze...keep the dessert selection up! I love having so many choices for healthy desserts!
*more crock pot meals!
*more quick, easy recipes a' la Ann Lovejoy's "8 Items or Less" cookbook
*more side dish suggestions for entree recipes
*more kid-friendly foods...remember what parents are competing against and maybe have comparable "light" recipes.

Finally, I want to second what Lynn B, emilycat, and others have said about nutrition in CL recipes. The thing I love about CL is that they don't try to pull that "no, really, lemon juice instead of oil is just yummy!" garbage that really turns me off about some healthy cooking. I love flavorful food, but I'm also trying to eat more healthfully. The only way that will happen is if eating does not become a miserable experience for me. Just to echo the crowd:

*quick lunches to bring to work
*freezing foods - things that specifically freeze well or, notes on if you are going to freeze and then reheat how that would change original cooking baking times and reheating times
*crock pot meals
*also liked the idea in the first post about reading and the impact on overall health and well being (I know many people here like reading almost as much as cooking!)

Wonderful, wonderful ideas. I would love to see dietary exchanges for all the recipes. It's easier to 'balance' a diet. Also, warn us if the recipe will appear/act unusual..like mixture will be very stiff..very dry, etc. I love the ideas of suggested accompaniments to recipes and also the weight in addition to the measurement of ingredients.

Okay...Here's my two cents. Won't be anything new or different, but just in case any of the powers that be are keeping track.

1> Like the thematic cooking classes. Future themes could include gadgets/utensils, spices, increasing fruits and veg in diets

2> Would like to see more vegetarian and vegan recipes

3> I agree with fewer dessert recipes

4> Very interested in seeing more quick and easy breakfast and lunch ideas.

5> Not terribly interested in exercise segments. Others do this just a well.

6> Would appreciate more nutrition-oriented feature articles (i.e., how this family does it, healthy eating in NameOfCityHere, what is a whole grain and why should you eat it, regional/seasonal foods).

Not to step on anyone's toes, but I really like it when CL takes old standbys and reworks them for us so that they are lighter. For example, I have baked pies for thirty years or more and am asked to bring pies to events, but I still learned something about lightening pies from their article last year about How to Bake Pies. I now use CL's recipe for Chocolate Cream Pie instead of the one I had used for years. So, CL, PLEASE keep on lightening those everyday dishes.

Also, even though some of us have cooked for years, I hope CL continues to instruct us in cooking techniques. I do not want the magazine to become so technical that you need to be a chef to make the dishes.

What fun reading through everyone's comments/suggestions!!! Everytime I'd think I had a new idea...someone else posted it...OH WELL!! I did want to respond and be counted.

1. love the "Back to the Best" segmet

2. presentation/appearance suggestions would be fun and appreciated

3. more fondue recipes - fondue does seem to be making a come-back

4. I feel it would be very helpful and healthful to have "PORTION SIZES" discussed, either in recipes or articles

5. more entertaining menues and pointers/ideas would be appreciated...for all kinds of occasions (I don't have much experience so...HELP)

6. I do need help with how to do meal planning (tips/ideas)(weekly)

7. I would also like to have side dishes included with the recipes...it's hard to come up with sides that compliment the entree

8. my DH & I are really trying to eat more balanced meals...how about more fresh fruit recipes

This is the best BB. I've gotten lots of good ideas and recipes from here - thank you all.

In January CL started asking for ratings on their recipes (online) and I expected to see the results but never did. I think they should include the top 5 (or so) reader rated recipes in the following month's issue. I just wanted to add...I agree with the portion size info. One of the things I love most about CL is that they almost always give portion sizes for each recipe (1.5 cups soup each, for example). I find it really hard otherwise to determine whether the portion size in the recipe is going to be enough for me (and especially my husband!) to eat, and how much I need to add in the way of side dishes. But there are still some recipes every issue that don't state this - I'd love it if they all had portion sizes included!! (Usually I avoid the recipes that don't, because I don't know if it will be enough food!)

Ok. I'll add my wishes to this list, but preface them by saying I have been a loyal reader since 1991, never missed an issue, and never will!

That being said, I would enjoy:

* More recipes for Salad Dressings!! They don't need to be complete salad recipes (although I like those too), just dressings. I have come to hate bottled salad dressings (thanks to you, CL!), but now I'm getting greedy and want MORE!! http://www.cookinglight.com/bbs/smile.gif

* More pressure cooker recipes (I already adapt soup and stew recipes as best I can)

* Never thought I'd want this, but more microwave recipes. I was a member of the club that thinks microwaves don't cook well, but your piece in the March issue has converted me, and because it's such a timesaver on weeknights, I'd like more of these great recipes!
* More features on a single fruit/veggie/ingredient/spice
* Continued focus on exotic/unusual dishes
* More "Lighten Up" recipes - I like to make standard/staple dishes too, and love lightened versions
* MENU PLANNING and grocery lists! This is always the hardest part for me. So many recipes, but what to put with it?
* More 30 minutes or less recipes - the majority of cooking is done during the week, when it's late and we're tired.
* 30 minute or less CATEGORY in the index - I'd like to be able to look at the index and see grouped all the 30 minute or less recipes so I can choose one quickly.
* And keep those pie/cookie/cake recipes coming! I love baking more so even than cooking, and I can't get enough of your dessert recipes!

Geez. You'd think by my list that I hate the magazine! But I am your most devoted fan, and can attribute much of my culinary expertise to you - you've certainly broadened my horizons. I was just thinking the other day about how limited my repertoire of dinner menus used to be (about 10 standard things). Now we rarely eat the same thing twice! I have given more gift subscriptions than I can count, and have converted many a non-believer that light(er) food can be fantastic by serving your recipes. Thanks CL.

I, too, would LOVE 12 issues a year!

I also love how Bon Appetit does their magazine... the spine (binding?) is flat like a book (not stapled like CL), and it says the month and year on it, PLUS a few things about that issue (ie, "Apple crisps/Roasting techniques/Brown bagging...") That makes it SO much easier to find a specific issue when they are stacked or in magazine holders. I wonder if CL could do that, too?

I'd like to see more main dish vegetarian meals. Many of the vegetarian dishes in that section seem more appropriate as side dishes instead of having enough protein, etc for entrees.

I'd also like to see a chart that shows what fish can be substituted for what, so that if fresh tilapia isn't available we'd have a list of alternatives.

I too would like to see reviews of kitchen appliances and gadgets.

I have to say that I really like the Beautywise section....I don't subscribe to any traditional "Women's magazines" like Glamour, McCalls, etc, so one article about girlie stuff is fun for me!!

I thought of another thing that I would like to see. It wouldn't have to be every month but if they would feature it from time to time... if someone is trying to get more iron or calcium etc in their diet, they could feature articles about what foods are rich in this or that, why it is so important to our health and then give several recipes rich in that nutrient. It would be helpful for those of us that prefer to get these things from diet rather than supplement whenever possible.

6- Remove all makeup etc. articles. (It takes place that can be use for other kitchen stuff)

7- Planner of weekly menus or monthly menu. (I have problems to plan for every night supper)

8- Big batches of one recipe to freeze and eat later.

In looking over this post I thought of a suggestion for the index. Right now a recipe is only listed under one heading, but it would be helpful if it could be listed under all headings it applies to. Thus, if something is a pasta but also is a meatless main dish it would go under both headings. Since I usually try to cook vegetarian, I often turn to the meatless main dish category, but then have to skim all the others that might apply to see if I missed any. I thought of this because of Grace's suggestion for a 30 minute or less category (which I think is a GREAT idea).

I just joined as a user today, but I've been a subscriber since 1991. It's been a kick looking through the posts on this thread! I've enjoyed the various features through the years and have prepared so many recipes, aboout 98% of them "keepers".

My request would be for an article every two years or so (or more often) on using the pressure cooker: for foods it does well, to speed preparation, even in tandem with stovetop, oven, and microwave methods etc. I grew up watching my mother often using two pressure cookers to prepare one meal. I use mine a lot though not like she did.

Also I'm really excited to see the introduction of !Gusto! My husband and I recently spent two weeks enjoying the summer weather and comido in Chile. We were glad to find out that Chilean cooking tends to be mildly flavored since we don't care for highly spiced Tex-Mex dishes. I'll be waiting to see how CL will lighten the recipe for Alfajores, an Argentine sweet!

I'm sure there are certain recipes that mail better than others, and there's probably a specific way to do it, but I can never find the info. With a family that is spread out all over the country, it'd be really nice to be able to share something homemade :-)

On another thread Grace mentioned another idea I totally agree with: CL should use more whole grains in their recipes. If CL is really interested in showing a healthy eating life-style then really whole grain pastas and breads, etc. should be the staples in the magazine rather than all the regular pastas and breads the magazine promotes now. As Grace pointed out, maybe emphasizing whole grains is still too far out for most Americans and CL is afraid they would lose readership. Maybe giving whole grain suggestions for most recipes would be an alternative (and a way to encourage healthier choices).

I would agree with: crockpot, lunch meals, sample menu planning,and more freezing instructions. I would also like to see articles on planning and preparing special meals for guests--like one for each holiday from start to finish.
