I'm a new magazine subscriber of 3 months. I was browsing the receipe index of 2000 and seen the chicken marsala casserole receipe. It was in the June issue on page 152. Is sounded good and I would like to try it. Does anyone still have this receipe? http://www.cookinglight.com/bbs/smile.gif

Here it is:

3/4 cup all-purpose flour
1-8 oz carton low fat sour cream
1 cup fat free milk
1/4 teaspoon salt
1/4 teaspoon coarsely groun pepper
1- 16 oz can fat-free, less-sodium chicken broth
1/2 cup Marsala wine
1/3 cup chopped celery
1/8 teaspoon ground cardamom
1 pound skinned, boned chicken breast cut into bite size pieces
1-8 oz package presliced mushrooms
2 cups hot cooked angel hair (about 4 ounces uncooked)
Cooking Spray
1/2 cup (2 ounces) shredded cheddar cheese

Preheat oven to 350 degrees.
Lightly spoon the flour into dry measuring cups, level with a knife. Combine the flour and the sour cream in a saucepan, stir with whisk. Add milk, salt, pepper, and chicken broth. Bring to boil, reduce heat, and simmer for 2 minutes, stir constantly. Remove from heat.

Place a large nonstick skillet on over medium-high heat until hot. Add the wine & next 4 ingredients (wine through mushrooms) , and cook for 10 minutes or until the liquid almost evaporates.

Combine the cream sauce, chicken mixture & pasta. Spoon into 13 by 9 baking dish coated with cooking spray. Sprinkle with cheese, bake at 350 for 30 minutes. Yield 6 servings (1 cup serving).

I have made this casserole before. It is very creamy and a little bland. It is good but certainly not one of my favorites.
