View Full Version : Question about sweet potatoes

i want to make some baked sweet potato wedges this weekend. after cutting them into wedges, do i just sprinkle them with olive oil and salt? would canola oil be better?
how long do i bake them? the same as regular potatoes?
i know they're denser than regular potatoes, so i'm at a loss as to how long to cook them. do i bake them at 350 or 400? out of over 5000 recipes on file, i don't have any recipes for this.

any and all help will be appreciated!

Here's a CL recipe in my to-try file that you could use as a guide to time and temperature. As for canola vs. olive oil, I would use olive oil because I much prefer it, but I think it's a matter of personal preference.

Soy-Glazed Sweet Potatoes

1/4 cup water
2 tablespoons brown sugar
3 tablespoons low-sodium soy sauce
2 tablespoons mirin (sweet rice wine)
1 tablespoon dark sesame oil
4 garlic cloves, minced
3 sweet potatoes, each cut lengthwise into 4 wedges (about 2 lbs.)
1 tablespoon toasted sesame seeds

1. Preheat oven to 400

2. Combine first 6 ingredients; stir well with a whisk. Arrange potatoes in a single layer in a 13 x 9-inch baking dish. Pour soy sauce mixture over potatoes. Cover and bake at 400 for 50 minutes or until tender; baste with soy sauce mixture. Bake, uncovered, an additional 10 minutes or until liquid is absorbed. Sprinkle with sesame seeds. Yield: 4 servings (serving size: 3 wedges)

I usually bake the sweet potato wedges in one layer on a baking sheet until they are fork tender. It might sound a little weird, but we like to serve them with honey mustard. Until we moved to Florida I only served sweet potatoes for Thanksgiving dinner. Now I love them! -sarah

SWEET SWEET POTATOES:

setting: High
cooking time: 23 minutes
utensil: stoneware serving platter


2 large sweet potatoes
1 tbsp. brown sugar
1 tsp. cinnamon
1/4 cup orange juice
2 tbsp. molasses

Wrap each potato in plastic wrap, put several holes in it with a fork and place in microwave. Microwave 20 minutes depending on size, turning 3 to 4 times.

Remove and slice with skin about 1/2 in. thick. Arrange pieces on stoneware plate and top with remaining ingredients. Microwave 1-1/2 minutes uncovered.

Turn pieces over; continue microwaving another 1-1/2 minutes uncovered.

i know there is no oil in this recipe, but its really good.


TWICE BAKED YAMS:

2 pounds yams or sweet potatoes (about 6 medium)
vegetable oil
1/4 cup dairy sour cream
1/4 cup milk
2 tbsp. packed brown sugar
2 tbsp. margarine or butter
1/8 tsp. salt
2 tbsp. coarsely chopped pecans

Prepare yams by just washing them but do not pare.

Rub with oil; put several holes in it with fork to allow steam to escape. Bake in 375 degrees oven until tender, 35 to 45 minutes. Cut thin lengthwise slice from each yam; scoop out inside, leaving a thin shell. Mash yams until no lumps remain. Beat in sour cream and milk. Beat in brown sugar, margarine and salt until light and fluffy; stir in pecans.

Increase oven temperature to 400 degrees. Place shells in ungreased rectangular baking dish, 13x9x2 inches; fill shells with yam mixture. Top each with pecan half if desired. Bake uncovered until filling is golden, about 20 minutes.

6 servings.

DO AHEAD TIP:

Before baking filled shells, cover and refrigerate up to 24 hrs. About 30 minutes before serving, heat twice-baked yams uncovered in 400 degrees oven until filling is golden, about 25 minutes.
