Hi,
I made the buttermilk blueberry pancakes and I just threw the blueberries in to save time. I was wondering if I could use the batter to make muffins. Anyone have any insight?
Thanks!

Hmm.
I'm going to go with my instinct here and say no. Muffins and pancakes have pretty different consistencies; pancake batter has a good bit more milk and less sugar than muffin batter, and I'm afraid your muffins might be gooey and not sweet enough and very flat. I'll be interested to hear others' opinions, though.
You know, my grandfather always makes loads of pancakes, freezes them, and seals them 2 to 3 to a ziplock bag. Then when he wants one for breakfast or a snack, he just sticks the whole deal in the microwave and they're ready to go! I've eaten some like that, too, and they really are quite good. http://www.cookinglight.com/bbs/smile.gif
This is a bit off topic but the other dat- in the spur of the moment, little time situation I decided to make a buttermilk coffeecake. Instead of using my buttermilk powder I used buttermilk pancake mix (I wondered why I had trouble mixing it with water. I saw the word buttermilk and that was it:0 I figured this all out after I put the cake in the oven. Well the texture was a little strange- rather gummy but it was edible (at least for the first day). I learned my lesson- slow down, wear my glasses and read the labels! Anyway my opinion is that the pancake batter would not make good muffins- how about a coffeecake??

I think I will take your advice and just use it for pancakes!
Thanks so much!
