Looking for somone who has held on to a back issue. I think 1995 or was it 1997? The front cover had a picture of a piece of lasagna, maybe vegi? There was an Italian section. I'm sure of some of the recipe names but am unable to find them in the archive. One was Panforte (dessert), Budini di riso (Little Rice Cakes), My favorite was a boneless chicken thigh recipe with proscuitto and herbs inside, tied and topped with a rosemary sprig. Sauteed and finished with chianti.Also included were two pasta recipes. One was from a restaurant with fresh vegies, the other had rappini (broccoli rabe)in it. Anyone who can help? I'm doing a cooking class this weekend and would like to use these recipes. I have lost them in my recent move! aaack!!!

Hi Anna Marie,
I have most, but not all, of the '95 Cooking Lights. The January copy has a picture of Lasagna on the cover, but it doesn't have any of the recipes you want. The May copy has a section called "Recipes from a Sicilian Mom", but alas, none of them are the ones you're looking for. I also have some of the '97 issues, but I won't be able to get to them until tomorrow (Friday)afternoon. I hope that it won't be too late to help you out. If you have any more clues, please let me know. I'll check the board before I start looking. I really want to find them, I'm Italian and those recipes sound great, just like home. With a little luck, someone else may respond in the meantime and make us both happy!

I have searched and searched...but nothing. I have Cooking Light back to 1987. Did find some easy Italian recipes in May, 1995 ("Recipes From A Sicilian Mom":Stuffed Eggplant, Anise Biscotti, Orange Fennel Salad, Sicilian Chicken Soup, Fresh Tuna with Tangy Onions), and October 1993("A Sweet Taste Of Italy":Torte Di Polenta, Miascia, Fichi Ripieni, Chocolate Grappa Cake, Tiramisu). Let me know if you are interested in any of these, and I'll keep searching. You do of course realize, that I now have a very LARGE stack of old Cooking Light mags on my living room floor with recipes I MUST try! ;-}

Hi. When you mentioned the cover I thought of Eating Well. Yes Sept/Oct 1995 had a lasagna cover (lasagna verde al forno It was the issue of rediscovering Italy There is a chicken in Chianti (page 57), Little Rice cakes (page75), Orrechiette with broccoli rabe (page 67) the only lasagna was verde al forno (page 14) In 1996 they also in EAting Well featured Now that's Italian with light lasagna's (Artichoke, mushroom & butternut squash, Sicilian & spinach with sausage lasagna) Along with really low fat garlic bread.

Thanks for the tip. I just dug out some old Eating Wells also. Missed the Artichoke Lasgne! It looks delicious, and now my pile of "to try" recipes is growing!

Vanessa!!! I'm so glad SOMEONE is on top of things. It sure isn't me. Those are the recipes! No wonder I couldn't find them on the Cooking Light web site. I'd love to have them! The chicken in chianti is easy, presents well AND it tastes good with so few ingredients. You can e-mail me if you would like, but it sounds like Melina might like the recipes too. I hope you have a scanner! Thanks so much to ALL of you who really went out of your way to help me.

Would it be possible for you to e-mail the "chicken in chianti" and the "little rice cakes" that have been scanned? Thanks for making me dig out some of my old issues! I found some great new recipes from years back that I had forgotten about.

I am running off to my old Eating Well collection now to check out these recipes again. They sound great.

time passes and val edits her post...

I remember now...I tried the ribollita from the September/October 1995 issue. It was excellent. It is a kind of minestrone with cabbage layered with slices of italian bread.

Thanks so much for thinking of me, but I now have the recipes! When I read "Sherlock" Vanessa's posting, I literally dove into my old cooking magazines and found the Eating Well copy she told you about. Is she good, or what? I intend to try EVERYTHING on your list. I'm so happy for the both of us!

How did you do that? How did you remember it was in an Eating Well magazine AND one from about six years ago to boot? That was almost scary. You're really good, girl, really good. And thanks for going to all that trouble, I benefited along with Anna Marie.

Glad I was able to help you out. I don't know how I remembered but E Well was one of my favorite magazines and by the description I recalled that they had a whole issue about Italy.....Enjoy the recipes http://www.cookinglight.com/bbs/smile.gif
