If anyone has the recipe for Lemon Zucchini Muffins from the June or July 1995 issue of Cooking Light I sure would appreciate a copy.

Zucchini-Lemon Muffins

2 cups all-purpose flour
1/2 cup sugar
1 tablespoon baking powder
2 teaspoons grated lemon rind
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 cup zucchini -- coarsely shredded
3/4 cup skim milk
3 tablespoons vegetable oil
1 egg
Vegetable cooking spray

Combine the first 6 ingredients in a bowl, and make a well in center of mixture. Combine zucchini, milk, oil, and egg; stir well. Add to flour mixture, stirring just until dry ingredients are moistened.

Divide batter evenly among 12 muffin cups coated with cooking spray. Bake at 400 degrees for 20 minutes or until golden. Remove from pans immediately, and let cool on a wire rack.

Can I substitute whole wheat flour for the all-purpose flour in this recipe? I have been making muffins for my husband & I to take to work during the week. I try to find recipes with some fiber to them. While this one sounds really good, I dont think it has much fiber. Thanks for any help.

When in doubt, try 1 cup of each. Usually you can substitue the flours for each other. I find that sometimes you don't get muffinds to rise the same if it is all whole wheat flour (for other recipes, as I have not tried this one).
