I have to bring an appetizer to a Ladies Night at our neighborhood pool tonight. I'll have maybe a half hour between work and the party. Any ideas? I'd like to stay away from dips, cheese & crackers, etc. Thanks!

Hot Brie Kisses!! (If you can bake them at your friends house?)

You can do a search, the recipe is probably posted here about 15 times. :D

I've been wanting to make the Hot Brie Kisses for a long time - but I'll have no time to bake and no oven when I get there.

I know you said you'd rather stay away from dips, but IMO a half hour, no baking, doesn't give you many options!

That being said, there is a great dip called Creamy Cilantro Dip that is easy to make and goes great with a veggie tray. You can buy pre-cut veggies, whip up the dip when you get home and it's really really tasty!!!

How about cantelope slices wrapped with proscuitto? Its very good and would take no time to assemble. If you could find some good figs, you could also serve figs cut in half and topped with a little goat cheese. (I'll bet no one else will bring this)

Summer pool party says bruschetta to me...some sliced baguette, and fresh from the garden chopped up tomatoes with a little garlic, fresh basil, a drizzle of olive oil...easy and fresh.

A friend of mines made these things called ***** bacon breadsticks from the sweet potatoe queens big fat book. They were soooo good, Does anyone have this recipe? I left my book at home :(
All I remember is you take bacon slices wrap (or twirl) them around plain breadsticks and roll them around chili powder and brown sugar and then bake in the oven for a couple of minutes.
Paula Deen does something very similar where you take sesame breadsticks, wrap in bacon and roll in garlic powder and parmessan cheese.

This sounds like a very interesting taste combination! Does the proscuitto just "stick" to the fruit after being wrapped around?

I may make this for a Labor Day party we're going to - in addition to my 7-layer dip I was instructed to bring! (boring!) :D

Pam, Yup the proscuitto should attach it self to the melon. I can't say it will stick to it but it should definetly stay on. Its really good and refreshing. Molto Bene!
Good luck on the brie kisses as well, thier out of this world!

Thanks Pat!!

I took the BB's advice and made my kisses and froze them! So I put them in the fridge this morning to thaw a bit then this evening we'll pop them in the oven. Hope that works ok!!

And on second thought, the melon/proscuitto wraps would be far too sophisticated for the party on Labor Day! I think i'm going to make a half dish of the Buffalo Chicken Dip along with my 7-layer. I've been wanting to try that!

Thanks for the suggestions - melon & proscuitto sounds great! (of course I may take the really easy way and stop at Kroger & have them steam some shrimp for me!)

A few quick, tried-and-true ideas:

Cream-cheese chutney roll-ups. Spread a flour tortilla with a thin layer of cream cheese. Spread some mango chutney over the cream cheese. Sprinkle with chopped nuts (pecans or cashews are good). Roll up and cut into 3/4" slices.

Strawberry (or other fruit) bruschetta. Mix a tub of cream cheese with a tablespoon of honey. Spread on toast rounds (you could do this on white melba rounds and they would taste fine) and top with sliced strawberries.

Another option for melba toasts or cocktail rounds: spread with prepared pesto and top with a piece of roasted red pepper. Sprinkle rounds with crumbled feta. Quick, colorful, and tasty.

You can skewer the proscuitto to the melon, but I haven't needed to because once you wrap it around a few times it stays pretty secure.

On buying proscuitto, yes, a lot of places charge $12-$15lb for proscuitto. Its kinda shocking at first to think about all that money, but the meat is sliced so ultra thin it takes a lot to make up even a 1/4 lb. I wonder how many hundreds of melon slices you could wrap with a pound of proscuitto. :D I bought some once for a dish, and I guessed at 1/4lb. I only needed a third of that, and we were eating proscuitto for a week! :p

At Albertson's it is $9.99 lb. I just bought it for the Proscuitto and Gruyere Strombolis I made for tonite!!! I only bought exactly the amount I needed and it's really thin.

He,he Hey guys! Okay I thought it was funny how CL actually bleeped out the name for me, I didn't realize I couldn't put it on the board, its actually the "B" word, Leanne you were right on!
Pam let me know how the Buffalo Chicken Dip Comes out when you half the recipe, I wanted to do that but wasn't sure....

You know I don't think the kisses are from CL thats probably why you can't find it. All I remember is that it uses phyllo dough,brie and hot pepper jelly. Let me see if I can find the recipe somewhere...

HOT BRIE KISSES
based on a recipe by Jane Snow which appeared
in the Pittsburgh Post-Gazette

2/3 lb. brie cheese
2 sheets puff pastry (1 17.3 oz. box)
hot pepper jelly

Thaw puff pastry at room temperature for about 30 minutes.
Unfold pastry and roll lightly with a rolling pin to remove creases.
Cut each sheet into fourths, then cut each fourth in half. Cut
each piece in half again to produce 16 even squares of dough
per pastry sheet.

Lightly spray mini-muffin cups with vegetable oil. Fit a square
of dough into each cup. The pointed edges of the dough should
extend straight up.

Cut brie into 1/2" squares. Place a piece of cheese into each
dough-lined cup. Top with 1/4 tsp. pepper jelly. Bake at
400 degrees for 10-15 minutes, or until golden.

Makes 32.
