I know this is a longshot, but I was wondering if anyone would happen to have Jacques Pepin's Turkey Cassoulet recipe from Simple and Healthy Cooking?

I have forgotten my recipe at home and won't be able to get it for a week!!

Here you go -

8 oz dry white beans (pea, navy or great Northern)
4 C White Chicken Stock or lower-salt canned chicken broth
2 lg carrots (about 9 oz), trimmed, peeled & cut into 1" pcs (1-1/2 C)
1 stalk celery, washed, trimmed & thinly sliced (1/2 C)
1/2 tsp salt (adjust if canned broth is used)
1/4 tsp dried thyme
2 bay leaves
3 whole cloves
1 medium onion (about 6 oz), peeled
2 lbs boneless, skinless turkey breast, cut into strips about 2" x 1/2" x 1/4"
1 small tomato (3 oz), seeded & coarsely chopped (1/2 C)
1/4 C chopped fresh parsley leaves
2 cloves garlic, peeled, crushed & finely chopped (1 tsp)
1/2 tsp Tabasco

Sort beans, discarding any stones or damaged beans. Wash beans in a sieve under cold water.

Place beans in large pot with stock/broth, carrots, celery, salt, thyme & bay leaves. Push cloves into the onion & add onion to the pot.

Bring mixture to a boil, cover, reduce heat to low & boil very gently for about 1-1/2 hours (stirring every 15-20 min to keep mixture from sticking to bottom of the pot), until the beans are soft & tender but not mushy, and most of the liquid has been absorbed.

Remove onion from the pot. Remove the cloves and discard them. Coarsely chop the onion and add it to the pot with the turkey, tomatoes, parsley & garlic. Bring mixture back to a boil & boil gently for 3-5 minutes or until the turkey is opaque and cooked through.

Remove & discard bay leaves. Serve, sprinkled with the Tabasco, within the next hour.

Note: Most dry beans sold in stores today are not more than a year old and do not really need to be soaked overnight. If you want to soak them anyway, two or three hours should be sufficient.

Glad I could help! Have you made this before? I've never fixed it...and the recipe sounded yummy.
