View Full Version : Penzeys' Raspberry Enlightenment : Need a recipe, please help??

I finally remembered that I have a jar of Penzey's 'Raspberry Enlightenment' sauce and that I forgot to save the catalog that had a recipe I wanted to try. (I think it was pork chops, but I'm not sure)

Much as I'd like to promise that I'll never toss another Penzey's catalog, I admit that sometimes I get carried away and actually clean house. :p :p :p

Does anyone happen to have that catalog, and if you do, could you PLEASE post it for me??

Also, if you've tried the sauce, please let us know what you think, and how you used it. Inquiring minds need to know.


Ingredients: raspberries, sugar, water, tapioca starch, spices, citric acid.

The only recipe on the site at the moment is for Cheeseburgers, with the sauce in the condiments. Not exactly what I was aiming for, but I thought I'd include it, in case any one else was curious.

Raspberry Enlightenment Cheeseburgers

2 lbs. ground chuck
10-11 slices of cheese (your choice)
2 onions, thinly sliced
1 TB butter
1/4-1/2 tsp. 4/S SEASONING
salt and PEPPER to taste
1 loaf Greek Fancy Bread or Italian Bread

Raspberry Enlightenment Ketchup:

6 TB. ketchup
1 TB. RASPBERRY ENLIGHTENMENT
swirl to combine

Raspberry Enlightenment Mustard:

5 TB. mustard
1 TB. RASPBERRY ENLIGHTENMENT
swirl to combine



Hamburger making tip: use a 1 cup measure to portion out the patties. 1/3 cup makes about a 3 oz. patty. 1/2 cup will make about a 5 oz. patty. Using the 1/3 cup measure, you can get 10 or 11 burgers from 2 lbs. of ground chuck. A patty maker works well especially if you need to make a bunch but you need one that will adjust in thickness. Salt and PEPPER the burgers to taste.
Greek Fancy Bread is similar to Italian Bread but it is shaped like a giant donut and has sesame seeds. Cut the bread into pie-shaped wedges with the wide part about the width of your burgers. Turn it on its side and slice it to make triangle-shaped buns.
Season the onions with 4/S and sauté in the butter until golden brown. Keep warm.
Cook hamburgers on a grill, in a frying pan or on an electric griddle (the griddle is easy for making them all at the same time). We made 3 oz patties and they took 4 minutes per side to get to medium-well but you can cook them to your preference. American Cheese or thinly sliced cheddar are great toppers. Place the cheese on the burger two minutes before they are done. Some cheddars may take longer especially if they are sliced thicker. Place on your triangle shaped buns and top with the golden brown onions. Serve with a dollop of RASPBERRY ENLIGHTENMENT ketchup and a side of RASPBERRY ENLIGHTENMENT mustard.

It was in my recycling pile - I'm glad I didn't pitch it!

Enlightened Pork Chops

Pork chops:
4 5-6 oz pork chops
1 tsp olive oil
1 tsp Galena Street Rib Rub

Pasta:
4 oz dry thin spaghetti
1 tsp olive oil
1/2 tsp marjoram (it actually says "marjoran" in the catalog, I'm assuming this is a typo, but just in case it's a new spice I've never heard of ...)
1/4 tsp Turkish oregano
1/4 tsp granulated garlic
1-2 tsp Raspberry Enlightenment

Snap Peas:
2 cups snap peas or pea pods
1/2 tsp olive oil
1 tsp Raspberry Enlightment
1/4 tsp marjoram
pinch Turkish oregano
dash granulated garlic

Sauce:
1/4 cup soy sauce
1/4 cup hot sauce (your favorite - we like Frank's)
1-2 tbsp Raspberry Enlightenment
1/4 tsp ginger
1/8 tsp granulated garlic

Put a pot with 4 cups water to boil for the pasta. Bring a smaller pot with 2 cups water to a boil for the peas. Have all the spices, RE, olive oil, and a strainer ready. Whisk together the sauce ingredients, set aside. Wash chops, pat dry. Brush both sides with olive oil and sprinkle liberally with Galena Street Rib Rub. The pork chops need about 8 minutes to cook for a standard chop like the one we show. The pasta takes about 7 minutes for thin spaghetti and the peas only 2. Time the pasta cooking to get it done about a minute before the chops. Get the pan or grill top good and hot for the chops. Cook 4-5 minutes per side, flipping once. Add the pasta at the same time as the chops, when done, strain without rinsing, toss with olive oil, sprinkle with spices, cover to keep warm. COok and drain the peas, toss with oil and spices, then add RE and toss again. Divide between 2 plates. Add RE to pasta, toss to coat, divide between the plates. Spoon a few tablespoons sauce onto the plates in the pork chop spot. Place pork chop on top of sauce, serve with extra sauce on the side.

Serves 2 (very easy to double or quadruple for a party). Prep time: 3 minutes. Cooking time, roughly 10 minutes total.

I got the stuff to try in my last order and I guess I remain unenlightened -- at least as to the wonders of the stuff.

Now Rothschild Farms Raspberry Salsa is another thing entirely - YUM:D

Thank you SO much!!! Recipe cut, pasted, saved and printed for my notebook. (and may I say, Wow, that was quick! )

I actually got pork chops out of the freezer for dinner, not remembering that we have leftovers set to go, so I won't be making this today, but this is in my 'definitely try this' pile for sure.

Thanks for posting your query here. I was curious about that sauce when I got that issue. I second the request for comments on 'Raspberry Enlightenment'? What did you think and how did you use it?

Bumping this back up to see if anybody has tried this recipe - I am dubious of a sauce that uses 1/4 C hot sauce.....

While I am dubious, my understanding is that Frank's Hot Sauce doesn't carry the same degree of heat as Tabasco Sauce or the Asian equivalents which are generally used in smaller doses.

I can't say for sure though since I had a bottle of Franks which I never wound up using and recently tossed since it had turned gray. :D
