Suggestions with what to do with beignet mix?

So I just received a big box of Cafe Du Monde's Beignet Mix from my DS who just went to New Orleans but I don't want to make beignets. Deep frying is just too messy in my house. Is there anything else I can make with the mix? The ingredients are flour, milk, buttermilk, salt, sugar, and leavening.

i have a box of that in cabinet too...a gift when my parents were down in N.O. a few weeks ago. I do plan on making them, but can't imagine making the whole box anytime soon. I wonder what else you could use that mix for.....

What about pancakes?? I'd suggest making a small batch, just to see what happens, though, lol. ;)

I'll be watching this thread too. I don't mind frying doughnuts, but when I do, I'm the only one in the house to eat them, and since I'm trying to lose weight, that isn't going to happen any time soon. ;)
