I lost this recipe... It is practically gold in my house. If anyone has it PLEASE post it or e it to me! I can remember the basic ingrediants but beyond that I am lost. (chicken, potatoes, red bell pepper, corn, cheddar cheese....) I did a search and no luck. Any help would be appreciated! April

Ding, ding, ding! I think this might be it! Was in the Nov/Dec '96 holiday issue! This sounds great, another missed one! Thanks for alerting us all to it! By chance, have you made w/l% milk?
CHEDDAR CHICKEN CHOWDER (N/D '96)
2 bacon slices
cooking spray
l lb. skinned, boned chicken breast, bite-sized
l c. chopped onion
l c. diced red bell pepper
2 garlic gloves minced
4 l/2 c. fat-free chicken broth
l 3/4 c. diced peeled red potatoes
2 l/4 c. frozen whole kernel corn
l/2 c. all-purp. flour
2 c. 2% low-fat milk
3/4 c. (3 oz) shredded cheddar cheese
l/2 tsp. salt
l/4 tsp. pepper
Cook bacon in Dutch oven coated w/cooking spray over med-high heat til crisp. Remove from pan, crumble, set aside. Add chicken, onion, bell pepper, & garlic to bacon fat, saute 5 min. Add broth & potatoes, bring to boil. Cover, reduce heat, simmer 20 min til potatoes are tender. Add corn, still well.
Place flour in bowl. Gradually add milk, stirring with whisk til blended; add to soup. Cook over med. heat l5 min. or til thick, stirring frequently. Stir in cheese, salt, pepper. Top w/crumbled bacon. Yield 7 servings (l l/2 c./serv.)

I make this with skim milk (so I'm sure 1% would be fine) and no bacon, and we love it that way.
This really sounds good since "the weather outside is frightful" (I'm hungry this morning).
I'm wondering about making a batch and freezing it in individual servings? Any comments?

THis is one of our favorite soups and it freezes well. I always make a big batch and freeze it in 2 serving containers for quick lunches and dinners.

I made this for my roommate's birthday bash a few years ago and one of the guests (a guy) actually asked for a container of it to go. I took that as a sign that it was a successful recipe.
