I made this last night for dinner. It was very very easy to make and hubby really liked it alot. I was surprised. I didn't think he'd like it that much. I wished I had some fresh fruit to serve with it. We had some eggs instead as a breakfast for dinner type thing. I did add a pinch of nutmeg and cinnamon to the batter just to give it more flavor. We'll probably have this again.

I'm not sure. I was kind of surprised that my husband liked it so much. I had one peice and he ate the rest. For kids, you may want to add fruit to it, maybe some whipped cream. I put some syrup on it. It certainly wasn't a traditional pancake- it seemed much lighter to me. The inside was a bit moist and the outside was almost crispy-like (providing that it came out correctly). It sure puffed up in the oven! I took it out after 15 minutes since I was afraid of burning the bottom. I think the nutmeg and cinnamon added a nice flavor to it.

lsdesign--My 3 year old loves the oven puffed pancakes and he is a slight picky eater. In the past I have made the Pear Dutch Baby from the J/F 2000 issue. (Oven puffed pancake topped with pears.) This past Friday night, I did top his with a little whipped cream and I think he liked it even more than normal.

Amy, I think the outer portion of my pancake was tough as well, but it turned out more on the crispy side. I love crispy food so I was fine with that. I may have overmixed as well since it says to just mix until moist. I was also trying to remove flour lumps!

Thanks, Mrs. R. I made this for supper last night and added cinnamon & nutmeg as suggested, and thought those flavors really made it great. I served it with sausage patties and a fruit salad consisting of oranges, bananas, a little coconut, pecans and a squeeze of lime juice. YUM.
One question tho: My pancake turned out a little tough. I'm guessing I over mixed it, but did anyone else have this problem? Next time I'll sift the flour so I won't be trying to break up lumps.

We had this for breakfast this morning and really enjoyed it! I made up the blueberry sauce from the same issue (the one that goes with the gingerbread cake) and served that on top - no ginger though, since DH hates it. We thought it was great!
My kids like the oven pancakes with warm strawberry jam on top of them. You can also use canned pie filling with a little almond extract thrown in.

What type of pan did you cook it in? My only cast iron pan is a grill pan so that won't work. The only pans that I have that will go in the oven are pie plates and those white pyrex casserole pans.
The pan needs to go on the stove first, so the pie plates and corningware are out. I don't see any reason why the grill pan wouldn't work - it might be a funny shape, but otherwise it might be OK. The good thing about this recipe is that the ingredients are cheap and it's really quick to throw together, so if the worst happens and it doesn't work it's not a big waste of your time and money! So I'd say try it in the grill pan - and let us know if it works!

In my experience, pancake batter is usually a bit lumpy. If you mix it long enough to make it smooth you'll definitely have a tough pancake! The lumps will bake out; next time mix just until dry ing. are wet. http://www.cookinglight.com/bbs/biggrin.gif

I made this this weekend. We thought it was good. Used wheat flour without any problems. I too, used a little maple sryup. Served it with fruit salad.

We make a Dutch Baby almost every Sunday moring. It is so easy. My kids love it with maple syrup. On the side we usually have fresh fruit, juice or milk, bacon or sausage (gotta go easy on this). I got this recipe from the internet.
Dutch Baby
1 cup flour
1 1/4 cup milk (nofat works great)
2 eggs
1 Tb sugar
pinch of salt
Mix well.
Melt 1 tablespoon of margarine in a baking dish. (I use a round glass pyrex pie dish and the microwave to melt the margarine)
Pour in batter.
Bake at 375 for approx 25-30 min. or until the Dutch Baby has puffed and browned slightly.

We have made this twice, once for brunch last weekend, and once for supper last night. On Sunday, we served with warmed maple syrup and sliced fresh fruit. Last night we had with warmed raspberry preserves and powdered sugar. We also served with a side of scrambled eggs. Definitely a winner! I thought it went together easily, and was very tasty! My second attempt turned out sort of tough, I think because I used a wisk to stir instead of a spoon. Does anyone know if that's what made it tough?

I love this recipe and have made it several times! Reminds me of french toast taste somewhat. LOVE IT!
I made the pancake this morning for breakfast and we really liked it! I served it as suggested with a sprinkling of powdered sugar and fresh fruit. It was light and tasty. One thing I liked about it was that it did not make me "blah" all morning as pancakes with syrup will sometimes do. You know, about half sick from all that sweetness.

Check your "white pyrex". If you are talking about the clear galss pyrex, I don't think those should go on the stove, but white Corning ware usually can go on the stove.

Just FYI for all of you who don't have a skillet for the oven - go ahead and use your pyrex pans - just put the butter in the pan, and put the pan in the oven to let the butter melt. I have been making these for 15 years, and I have ALWAYS set the pan in the oven for the butter to melt. It works fine.
What issue is the oven puffed pancake from again?
Also, I was home sick yesterday and looking through some old CL's (between naps) and found this recipe. I thought it would be appropriate, given the thread. It looks like a good one to try. It is from Mar/Apr 1993.
Puffy Pineapple Pancake
1 sm ripe pineapple, peeled and cored
Vegetable cooking spray
1 TB margarine, melted
1/2 cup plus 1 TB all purpose flour
2 TB dark brown sugar
3/4 tsp baking powder
1/2 tsp ground cinnamon
1/4 tsp salt
3/4 cup skim milk
1/2 tsp vanilla extract
2 eggs, separated
1 egg white
Cut pineapple crosswise into 1/4-inch thick slices; set 5 slices aside. Reserve remaining for another use.
Coat a 9-inch pieplate with cooking spray; coat with margarine. Arrange pineapple slices in pieplate, overlapping. Bake at 425 for 20 minutes; set aside.
Combine flour and next 4 ingredients in a lg bowl; stir well. Combine milk, vanilla, and egg yolks; add to dry ingredients, stirring until smooth. Beat 3 egg whites (at room temperature) at high speed of an electric mixer until soft peaks form; gently fold into flour mixture.
Pour batter evenly over pineapple. Bake at 425 for 15 mintues or until puffed and golden. Remove from oven; cut into wedges. Serve immediately. Yield: 4 servings.
I'm just curious. I've never even seen a "puffed pancake" before. I saw the picture, but it almost leads me to think it is like a popover. Is there any "inside" or is it just a paper-thin "bag" with air in it. How would you describe the "inside?" It looked like a somewhat deflated balloon!
AD, it did remind me of a popover inside! I made it for the 1st time this morning and we enjoyed it thoroughly with fresh pears! I love the raspberry preserves idea too! Anyway, I don't have a cast iron skillet and so I used a metal cake pan thinking this would go on stove top as well as oven. Worked great!

i thought this was a cross between a donut and a crepe. i love this quick and easy breakfast. Boysenberry syrup is tops here at my house!
