For the first try at the Thai Salmon Curry recipe in current/last month's issue in the 30 minutes or less section, I made the following substitutions to accomodate what I had on hand: instead of watercress I substituted fresh spinach and a handful of fresh cilantro; and instead of the chile paste with garlic, I added the same quantity of Thai green curry paste. The result was great layering of flavor. I later remade the recipe as written and although good, I liked my version better. Have had a non salmon eater try it my way on her own and she concurs.
