I made this today after reading several earlier mixed reviews. To me, it needs something and I am not sure what. Like several people, I didn't bake it - just carefully warmed it on the stove. It wasn't dried out, just lacked something. I always add curry powder to my standby (full of fat, really bad for you, but tasts great) tuna noodle casserole. Since this version (healtier) doesn't have any mayo, I was thinking that lemon juice, or something tangy would help. Any thoughts or comments?

Did you use regular grocery store curry powder? I don't think it's nearly as potent as what you can get from Penzey's. I use their maharajah curry powder which is VERY flavorful, along with some of their hot curry powder. This gives it a lot of punch, so the dish isn't bland at all. I don't really have any other ideas for you - I'm not real creative in that way. Hopefully some others will have some ideas! But I would definitely get a good quality curry powder. That alone has made a huge difference in all my curry dishes!
