a real good dinner out of all the odds and ends in your refrigerator???

Last night I literally cleaned the refrigerator.
I had 2 containers of homemade chicken broth I pulled from the freezer to make soup, but never made the soup.
I had tomato paste; the sundried tomato liquid from rehydrating;and rosemary merlot flank steak sauce.

I sauteed two onions in a little pam and added one diced red pepper.
I added 2 diced sweet potaotes that were in my pantry for several weeks.

Cooked this in the chicken broth about 30 minutes until tender and pureed in the food processor with a can of black beans.

Then I added 3 leftover grilled bonless chicken breasts diced.
I also added some frozen whole kernel corn.

Spices added were garlic powder and cinnamon.

This was outstanding!!!!
Tasted like a mild chili soup.
DH and I really enjoyed it, but unfortunately we may never have it tasting exactly the same again!!!!!!

So dinner was almost FREE.

It's so cool when that happens!

I'm usually a recipe follower, but there have been a few times when I've pulled stuff together like that.

Sounds wonderful - congrats on a successful odds and ends recipe.

I find myself doing the 'what-ever-is there' every once in a while but unfortunately I usually can't completely recreate my fridge-clean-out masterpieces. I guess I should take notes as I go. Maybe part of the problem with a 'fridge creation' is that I am so suprised that a particular combination of ingredients worked so well the first time - then when I try and recreate it I have higher expectations.

A few nights ago, I dusted some shrimp in creole seasoning, and sauteed them in garlic butter. Delicious the first night, then the next night, I took the leftovers, plus the yummy pan juices, and used them in a double stuffed potato.

I kept it simple, just cut the potato in half, scooped out the potato into a bowl, mashed it, added the diced shrimp and their juices, a good pinch of baking powder (blended in well), a dash of chives, low fat sour cream, milk (for moisture) and white pepper. I baked the empty potato skins for a few minutes in the oven, while I did the mixing, then I put half the mixture in each potato skin. Topped them with a bit of grated sharp cheddar, and baked them until the cheese was nicely melted and golden.

I liked them a lot, but dad missed the point of their delicate flavor, adding Baco's and hot sauce. "Oh, were those shrimp?" sigh. ;)

Next time I'll just add more shrimp. :)
