I have decided to try my own pizza crust tonight, thanks to all the wonderful helpful threads on here. I am going to give a shot to the Oat Bran pizza crust. Now, for toppings. I would like this pizza to include chicken, roasted zucchini, eggplant, and red pepper; and I have cheddar, pepper jack, and mozzarella cheeses. Oh, and feta and goat cheese. What do I do to bring it all together? I was sort of thinking buffalo chicken pizza but not sure if that will work with the veggies. Any thoughts or recommendations? BBQ? Just a regular tomato-based sauce? I don't want to screw this up!

We made a pizza with similar toppings on Friday using pesto as the sauce and fresh mozzarella cheese. I don't think you could go wrong with the regular tomato sauce, though, and I think goat cheese would be very yummy with the chicken and veggies!

If it were me, I'd do the pesto, a tomato-based sauce or no sauce at all (my husband prefers sauce, but I like pizzas without sauce too). I'm not a big fan of buffalo or BBQ sauce on that kind of pizza because it tends to overwhelm the flavors of the veggies. If I use that kind of sauce, it's usually on a meat-dominate pizza.
I've done many pizzas similar to what you are doing and what sauce I pick kind of depends on my mood or what I have on hand. Also, if you're not adverse to onion or garlic, I'd throw in some one or both of those too - you can roast them along with the veggies. Yummy! :)

thanks all! DH voted for buffalo/bbq and it was darn good! I meant to do onions, but forgot in the end. have leftovers for lunch today - we'll see how that goes. I'm not sure I got the crust quite right - must reread the pizza crust instructional thread - but DH absolutely loved it, so I must have done something right!

Too late for this time around, but next time you could always do both. As the mom of two kids who are total opposites, I am quite familiar with "Half and Half" pizzas :rolleyes:, and they work very well. We order them that way and we make them that way at home, too. It DOES give you more variety, and if you don't like one sauce, well, it was only HALF of the pizza!

Terri, did the dough turn out too sticky? I found I had to add almost an extra 1/2 cup or so to the dough to make it more of a "dough" consistency. I thought it was because of measuring the flour wrong or something (spooning instead of dipping). I'll try to remember to bring in the Good Carb Cookbook tomorrow to check I got the recipe right, too.
