Hi everyone, some friends have invited us over for dinner Sat. She is making a shrimp pasta with peanut sauce...She asked me to bring a salad and I can't think of what might pair well with this combo of flavors...Any suggestions? Thanks http://www.cookinglight.com/bbs/biggrin.gif
I also would love to take a great wine..any suggestions here are also welcome!

I'm not sure if you have any sort of ingredients in mind already, but cucumber viniagrette salads work really well with Asian dishes. With something like a peanut sauce, the sweet and sour dressing pairs really well and is especially refreshing. I have some great resources at home, so maybe I can come up with some better ideas this evening http://www.cookinglight.com/bbs/smile.gif

Here's a salad that I got from our supper club. I remember that is was really tasty & it goes with the Asian theme. (Not a CL recipe though (I think)).
Ginger Salad:
Ginger Dressing:
1/4 Cup Rice Wine Vinegar
*1/4 Cup Peanut Oil
1/4 Cup Soy Sauce
1/4 Cup Hoisin Sauce
1 To 2 Tablespoons Grated Fresh Ginger
1/2 Teaspoon Sugar
1/2 Teaspoon Dry Mustard
1/4 Teaspoon Chinese 5 Spices
1/4 Teaspoon Minced Garlic
1/4 Teaspoon Chili Oil
Combine all ingredients and let stand at room temp for 2 hours. Pour through a fine mesh strainer discarding ginger and garlic.
Yield: 1 cup
*If you can not find peanut oil you can borrow your rabbit's raw peanuts and mash up 5 or 6 and let them float in sesame oil. (Just a side note from the girl who brought this. http://www.cookinglight.com/bbs/smile.gif)
Salad:
1 Carrot Scraped and Cut into Thin Strips
1/2 Cup Fresh Sugar Snap Peas Cut In Half
4 Cups Mixed Salad Greens
1/2 Cup Shredded Red Cabbage
1/2 Cup Sliced Mushrooms
1 Tablespoon Toasted Almonds
Arrange carrots and sugar snap peas in a steamer basket and steam for 1 minute. Toss remaining ingredients with Ginger dressing and sprinkle with toasted almonds.
Yield: 2 servings

A cucumber salad would also be terrific. I peel and seed cucumbers, slice thin, season with salt and rice vinegar, top with toasted sesame seeds. Very simple. You can also add some sesame oil, if want. I have also added thinly sliced red onion, and/or grated carrot.
My wine of choice with asian food is a good, fairly dry, Gewurztraminer (I always spell that wrong!). You can check out the Wine Spectator wine search for suggestions in your price range.
