Put this together last night for today's breakfast. It went together quickly and was very delicous. A keeper for me.

Thanks Donna - I just got my issue yesterday and was eyeing that recipe. I need more breakfast ideas!
Donna-I have to agree, the Breakfast Tortilla Strata is excellent! It is easy to prepare and tastes great. I have made the CL Overnight Artichoke and Ham Strata as well and it has always been a hit with my family.
Donna here is the recipe:
Overnight Artichoke and Ham Strata
yield:6 servings
3 English muffins, split and quartered
1 T. butter or stick margarine, melted
1 cup chopped lean ham (about 4 oz.)
1/2 cup (2 oz.) grated fresh Parmesan cheese
2 T. chopped fresh chives
1 (14 oz) can artichoke hearts, drained and chopped
1 (12 oz.) can evaporated fat-free milk
3 large garlic cloves, minced
1/8 tsp. ground nutmeg
3 large eggs
3 large egg whites
Arrange muffin pieces, crust sides down, in an 8 inch square baking dish coated with cooking spray; drizzle with butter. Arrange ham and next 4 ingredients (ham through garlic)over muffin pieces. Combine nutmeg and remaining ingredients in a bowl; stir well with a wisk. Pour over muffin mixture. Cover, chill 8 hours or overnight. Preheat oven to 375 degrees. Uncover strata, bake for 50 minutes or until set. Remove from oven, and let stand for 10 minutes.

Can you let us know the nutritional values of the strata you posted? I'm on WW and have to figure the points, thanks!
The nutritional info for the strata is calories:280, fat:8.9g(saturated 4.1g), protein:20.4g, carbohydrates:29.8g, fiber.1g, cholesterol:113mg,iron:2.3mg,sodium:819mg,calcium: 367mg

Yea! I'm so glad to hear this is good. The recipe looked terrific. I'm going to put it together tonight for breakfast tomorrow. If I'm feeling especially industrious, I may make the Strawberry-Cream Cheese Muffins as well.

We had the leftovers today and they were just as good.

My husband and I though this was quite good. If I were making it for friends (most of my friends don't bother to cook low-fat or vegetarian) - I'd probably up the cheese and add some chicken. The sour cream really gives it a comfort-food quality.

Breakfast Tortilla Strata

1 cup bottled salsa
1 cup canned black beans, rinsed and drained
10 (6 inch) corn tortillas, cut in 1-inch strips
cooking spray
1 cup (4 ounces) preshredded reduced-fat Mexican
blend or Monterey Jack cheese, divided
1 cup low-fat sour cream
1 cup fat-free milk
1/2 teaspoon salt
2 large eggs
2 large egg whites
1/4 cup thinly sliced green onions
Combine salsa and beans in a bowl. Place 1/3 of the tortills strips in an 11 x 7-inch baking dish coated with cooking spray. Top with 1/3 cup cheese and about 1 cup salsa mixture. Repeat procedure with 1/3 of tortilla strips, 1/3 cup cheese, and remaining salsa mixture; top with remaining tortilla strips.
Combine sour cream and next 4 ingredients (sour cream through egg whites); stir with a whisk. Stir in onions. Pour over tortilla strips; sprinkle with 1/3 cup cheese. Cover and chill 8 hours or overnight.
Preheat oven to 350 degrees.
Remove dish from refrigerator. Let stand at room temperature 10 minutes. Cover and bake at 350 for 20 minutes. Uncover and bake an additional 15 minutes or until lightly browned.
292 cal, 9.2g fat, 17.7g pro, 36.5g carb, 93mg chol, 755mg sod.

Has anyone made the Breakfast Tortilla Strata and substituted flour tortillas for the corn ones? I'm not real fond of the corn tortillas but the recipe sounds so good I might make it anyway.
