Is butternut squash a starchy vegetable, or a "regular" vegetable? I made some last night for the first time and it was great!
Hi NydiaC, I don't know the answer to your question but how did you prepare it? I've never prepared butternut squash before. I actually had yellow crook neck squash last night and sprayed some butter pam in a non-stick pan, sliced up the squash in rounds, sprinkled them with garlic salt and basically fried them like a burger but without the fat. It was really good! They got kind of toasted on the outside but were still crispy. Yummy!

I love all winter squash -- I buy one at least every week. Although they have a bit more calories than summer squash, they're a "real" veggie, so to speak.

Hey folks!
I'm searching around for nutritional info on winter squash. I know that is it loaded with Vitamin A, is low in carbos and cals and I LOVE butternut and acorn. I don't believe it's considered a "starchy vegetable" but someone may chime in with better info. I'll keep searching...
Winter squash is so incredibly versatile. I've made bread, timbales, soups, pies, stuffed it with barley, veggies and cheese for a great side dish. It has replaced white potatoes for me- so much more satisfying and nutritious. If I am just having it with dinner I slice in half a butternut, remove the seeds and bake it at 350 for 25-30 minutes. A little butter, a little brown sugar and I'm in heaven!
The October '00 CL has some great recipes for gourds. I find butternut has the most flavor and richness.

Thanks, everyone for your information. I'm excited to hear it's not a starchy veggy. I'm trying to expand my horizons with vegetables and this one is certainly on the list to have more frequently.
hka, I actually had the butternut squash two ways last night. I bought it for the Chopped Salad with Ginger-Miso Dressing from March 2001. (Which, by the way, was wonderful!) In this recipe you grate it into the salad raw. Then, since I had some left over, I roasted it in the oven and ate it with a little butter and salt. It was very good.

Since I use the diabetic exchange program in my diet plan---I'm an expert on diet exchanges!
Summer squash is not considered a starchy vegetable. But winter squash, including butternut and acorn, is considered a starchy vegetable.
