I came across a recipe requiring "fermented" black beans? Anyone know exactly what they may be, or a brand name. I have never seen this term used for beans before.

Nevermind, I found the info I was looking for:
fermented black bean = salted black bean = dow see = black salted fermented bean = Chinese black bean = salty black bean = black beans in salted sauce Notes: These come in plastic bags, boxes, or in cans. Those in the plastic bags are considered the best. Cooks disagree about whether they should be soaked or rinsed before using. Substitutes: cooked soybeans + soy sauce

Look for them in the Asian food section or have your grocer order them.

Well, I have been searching for these beans and cannot find them. Anyone know of a particular brand? Does it actually say "Fermented Black Beans" on the label, or do you read the fine print to see that word? Are they canned or dried?? I now live in Amish country, so not too many asian markets are around (or at least I don't know where they are). Thanks for any input.

I would be surprised if you actually saw "fermented black beans" on the label -- actually, I'd be surprised if you could even read the label! I doubt that you'll find them anywhere besides an asian market, and it's not one of those common things that will probably have a label in English. You might try some online grocers if it's a recipe you really want to try. A while back, I had to pick up fermented red tofu for a Chinese recipe, and I ended up having to ask the grocer at the Asian market to help me (usually, I can at least make my way around the store and find most everything I need from the labels or what it looks like). Anyway, I ended up with this jar that had NO LABEL. Just a jar with a red plastic lid. It worked out great and now I know how to find it without asking, but I would never have found it on my own.

Funnybone - do you live in the Lancaster, PA area? There is an excellent international food market in town, I don't know the name offhand but I can get it for you. Otherwise, any good health food store should carry or be able to order this item (can't think of a brand name) in addition to asian markets.

Yes, I'm in the Lancaster area. I'm fairly new here and have not been to the market yet. I'm originally from Canada and am planning a trip back there in April. I just might go to Toronto's Chinatown and pick up some interesting things. Thanks for your help everyone!
