Made this for dinner tonight. Its from an old, old source: A special interest publication from Bon Appetit, entitled "Too Busy to Cook" (basically, a compilation of recipes from the monthly column of the same name) - from 1992. The original recipe claims to serve 2, but we got 3 servings from it. Its a little higher in fat than what we usually eat, but it was very yummy!

Quick Kielbasa Pizza

1 teaspoon olive oil
1/2 small zucchini -- diced
4 ounces turkey kielbasa
4 each mushroom
3 tablespoons sun-dried tomato halves
1 teaspoon basil
1 teaspoon oregano
8 ounces boboli shell
1/4 cup pizza sauce
1/4 cup parmesan cheese
1/4 cup mozzarella cheese
2 ounces goat cheese
Preheat oven to 450
Heat oil in skillet over medium low heat. Add zucchini, sausage and mushrooms and saute until veggies are almost tender, about 4 - 5 minutes. Add sundried tomatoes and saute until veggies are tender, about 3 minutes longer. Remove skillet from heat, and stir in oregano and basil
Arrange pizza shells on small baking sheet. Spread half of pizza sauce over each. Sprinkle each with half of parmesan. Divide veggie mixture between pizzas. Top each with half of mozzarella and half of goat cheese. Bake until mozzarella melts and pizzas are heated through, about 9 minutes.
