I made a couple of things from the new April issue.

The Buttermilk-Apple Coffee Cake is very good. I would make it again.

Quick Vegetarian Chili with Avocado Salsa is also great. Mine wasn't as quick because I didn't have the quick-cooking barley; used regular, and I also didn't serve it with the Salsa. I had it for lunch and just didn't want to fool with the salsa. If I were to make it for dinner I would though.

I'll add my 2 thumbs up for the Buttermilk Apple Coffee Cake. I just made it and it's very good and was easy to put together.

I made the Florentine Frittata a couple of days ago and it was great! Very easy to make and the flavors blend well -- I love feta cheese and spinach, so I thought it was a great combination of ingredients. My DH and I both gave it an 8 out of 10 -- next time I will add a few more spices to pep it up, but overall it was yummy. We will be making it again soon.

I also made the Florentine Frittata and it was quite good. The only problem I had was using a cast iron skillet - the potatoes started to stick like crazy, so I switched to my All-Clad non-stick and it worked like a charm. I think I'm so used to non-stick that I just can't cook on anything else (except for sauces and such)!

Oh and for all of those that complain that CL makes the serving sizes too small - I think they've overcompensated with this recipe!!! It is a 10-inch frittata and they have it at 4 servings - that's an awful big wedge!!! I cut mine into 6 pieces.

I've made the Apple Tart in the French cooking article. Turned out beautiful and delicious!

Oh Susan, I think I'm going to make that one tonight for dessert! It looked awesome - glad to hear it came out as good as it looks!

Although the recipe didn't call for it, I sprinkled a little cinnamon over the apples before baking. MMMMM....

I must also add my approval of the Buttermilk-Apple Coffee Cake. We had weekend guests and I made it for brunch this morning. It was a hit with everyone from the 7 years old to the adults! The apples smelled so delicious it brought our guests downstairs to see what we were having. http://www.cookinglight.com/bbs/biggrin.gif

I made the Buttermilk Apple coffee cake this weekend based on Terry and Peggy's good reviews.

Since my BF recently expressed his love of coffee cake recently, I decided to make it. My roomie likes it as well.Coffee cake was something that I always felt would be too "frivoulous" to make. It was fairly easy to make and having a stand mixer helps. I made it the night before but it reheated well in the microwave.

This is the first time that I have ever made one since high school and that was the velvet crumb one from off the back of the Bisquick box! This is a keeper! My only gripe is that it is too small as the 3 of us wanted more and we all give it a thumbs up.
