View Full Version : requested recipe-cascadilla (creamy gazpacho)

Cascadilla
from The Moosewood Cookbook

1 c chopped cucumber
1 chopped scallion
1 clove crushed garlic
1 tsp honey
1/2 tsp dill weed
salt and pepper
4 cups tomato juice
1 c yogurt or sour cream
1 chopped green pepper
several fresh raw mushrooms, thinly sliced

Combine and chill...serve with croutons...garnish with watercress.

makes 4-6 servings

Changes I make:I add some chopped jicama. Also, I put in about a 1 tbs. balsamic vinegar and substitute fresh dill (1 tbsish) for the dried dill. This is a great gazpacho that tastes like summer!!!

I am making gaspacho tonight. I make mine with a little chipotle pepper and lots of red wine vinegar - 1/3 a cup actually.
