If a recipe calls for evap. skim milk, is there a way to substitute regular milk or even powdered milk? If so, what are the proportions to sub. for a 12 oz. can? I hardly ever have this item on hand. Thanks in advance.

I can give you the recipe for substituting evap. milk for milk and I guess you could just reverse it!
Anyway...
1 cup whole milk = 1/2 cup evap milk+ 1 cup water; reduce the sugar in the recipe slightly.
