View Full Version : Freezing Chipotle-Chicken Stew?

Has anyone tried freezing this? If so, how was it when you thawed it out? Did the potatoes go to mush? I'm having it for supper tonight and there's a TON of it! I wanted to freeze some for lunches. I'd appreciate any suggestions.

It looks like the potatoes do get mushy.

don't some potatoes freeze to mush more than others? red versus the other kind?

This does make a LOT of stew...but very good! We ate it a couple of nights (gets better w/ age) & then froze the leftovers. I wouldn't freeze this long term (several months), but when thawed & reheated a couple of weeks later, I didn't find the potatoes got mushy. If anything, they got a tad softer & therefor acted like a thickener for this very watery stew. I think the ageing mellowed & rounded out the flavors & it was better than when fresh.
