View Full Version : Anyone with recipes for a friend with Celiac disease?

I am starting to plan our soup nights. One friend has celiac disease ( no wheat) and I would like her to be able to have some soup and dessert for once (she usually just eats the salad and skips dessert).

Does anyone have any suggestions?

You could try a rice pudding for dessert - just be careful there's no cornstarch in it. There are many soups that would be possibilities, but you want to avoid anything with pasta, soy sauce or commercial broths (I think most of them have gluten or cornstarch) - try making your own stock instead. A bean-based soup might be good.

If you check out the healthfood section at the grocery store, you should be able to find gluten-free flours etc. that you can try out for breads/dessert. There are also a series of books by THe Gluten-Free Gourmet that are quite popular, that you should be able to find at the library.

I just checked our library's website, and the author of The Gluten-Free Goumet is Bette Hagman. Our library has 3 of her books, so I would think the Edmonton libraries would have at least one.

I occasionally bake for someone who has celiac disease, fudge is a good choice, I like the Rocky Road Fudge on the Foodtv site, also different types of meringues. Cookies or Pavlova come to mind.

Hi:
I have wheat allergy but I use CEliac recipes a lot and Bette Hagman books.
Your local health store is a good place to find things for your friend.
You have pastas, breads, Gluten Free mixes for baked goods, pizza, desserts there.
My only advice is read labels of everything and let her know what the ingredients are. Many times theres gluten hidden in ingredients.
Because your friend is familiar with her disease she can guide you in what is ok and what is not.

I was planning a bean soup, but would not have thought to read the broth ingredients. Thanks for that!

About dessert: I can't see making fudge, just bc my children would be out of control with it. I would not want to lay out a big tray, then tell them hands off. But rice pudding is an interesting idea! I don't want to ask my friend bc I want to surprise her with a meal she can participate in.

Meringue is also a nice idea. Is cornstarch (i.e. for custard on top of a pavlova) OK?

crustless cheesecake is a good option, or a cheesecake with a nut crust. Or a flourless chocolate cake. Or chocolate mousse.

Your friend will really appreciate that you went the extra mile to make things that she can enjoy.
