Hi Emily - I posted this request once before on the board, but I think it was before you started participating. I went to school at Duke in the early 90s and fell in love with Chapel Hill's 411 West restaurant... mainly the focaccia bread with artichoke herb spread appetizer.
I know you're pretty good at re-inventing recipes, so I'm wondering if you been there/had that and if you have any ideas on how to recreate it. Somehow the recipes I've tried haven't ever lived up to the real thing.... they're too much filler and not enough artichoke/herb.

I'm totally kidding; seriously, 411 was the prime date restaurant because the food was wonderful and it wasn't out of a college student's budget, not to mention that you could walk there from any dorm or sorority house on campus.
Anyway, I am familiar with the appetizer, because whenever groups of us would go, someone was bound to order it. I went to Chapel Hill too and just hearing about 411 West makes me hungry!!! Living in San Diego, I don't get back there much, and when we do my husband always wants to go to Pepper's Pizza, Armadillo Grille or Margaret's Cantina. Anyway, 411 was where he and I went all the time while we were in college and wanted a "nice date". My suggestion might be just to call or write them and ask the chef for the recipe and then adapt to make it lighter.
--not that I'm "butting in" here, but Emily, your assistance is required on your thread about the CanoeHouse recipe.

I went to Duke in the early 90's too, mightyh! I graduated in 1992.
Unfortunately, I never went to that 411 West restaurant.
Maybe someday if I go back...

I don't have any suggestions for recreating the recipe (never had that dip with the focaccia - only the salsa). I just wanted to add that I LOVE 411 West. My husband and I eat there all the time. Twice in just the past week and a half! (Although that is more frequent than usual.)

Wow - who knew I'd find another Dukie (and several Tar Heels) on here? I guess I should have said I started Duke in the early nineties.... I'm Duke 96, Valchemist.
Anyway, thanks for the suggestions, memories, and help so far. I did track down an email address for 411, so I am also simultaneously trying the "ask and ye shall receive" plan.
I'm just praying our basketball season keeps going for another week..... :/ So nervous.
