View Full Version : Help for chili with sour acidic taste

I need help! I normally add 1 can of diced tomatoes, and tonight I added two for variety. What a mistake! Now I'm stuck with chili that is overly tomato-ey. Any tips or suggestions? I've tried adding 1 T of brown sugar and extra chili powder, but it still has a sour flavor. Seems like I heard that adding a carrot to tomato sauce takes the edge off something....:confused: , but I can't remember what it is.

A little more chili powder, some cumin, salt, garlic, some beer (would thin it), some cornmeal (would thicken it), a chipotle ...one or more of those depending on whether it's just tomatoey or where the balance is.

I find a spoonful of beef bouillon base, I use the President's Choice brand, helps when this happens. The stuff that's like a gel in small jars, not the cubes, the cubes seem too salty.

I was thinking about this -- you said you added another can of tomatoes and it tasted too tomatoey, but then you also said sour or acidic. When I have chili that gets too tomatoey, it usually seems sweet to me. Any chance something is past its prime? Or maybe you got a can of less than ripe tomatoes. If you don't think anything you've put in the chili might have gone bad, I would tinker with the seasoning a little at a time and see what pulls it in the right direction until you find the way you want to go. Then you can add more of that.
