With Easter fast approaching and a lot of company coming, I was wondering what everyone is planning to serve. Any ideas?

I'm interested in hearing this as well. As for me, we are planning to go out of town, so we will be on the "being served" end.
The Meat Lab here on campus sells fantastic tasting hams. I'm going to get one and put some sort of glaze on it. I'll probably also do some sort of potato au gratin dish, along with roasted asparagus. For dessert, probably cheesecake!

Here's a casserole that goes great with ham. It sounds strange, but it is fantastic! It's one of my favorite recipes. It's not light though, sorry.

Pineapple Casserole
Recipe By : Linda in MO
Serving Size : 4 Preparation Time :0:00
Categories : Casserole , Side Dish
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 -20 oz. can pineapple chunks in it's own juice (drain and keep juice) -- I like Dole
3 T. flour
1/2 cup sugar
1/2 cup grated mild or sharp cheddar cheese
3 -4 T. melted butter -- I always use butter and not margarine
3/4 -1 c. crushed Ritz crackers
Preheat oven to 350. Combine flour, sugar and 3 T. pineapple juice.
Add cheese and pineapple and stir.
Spoon into casserole dish.
Mix cracker crumbs with the melted butter.
Cover casserole with crumbs.
Bake 25 minutes or until heated through and golden on top.
Serving Ideas : This is great served with ham or smoked pork chops.
NOTES : You can double, triple, or quadruple this recipe.

SueK, I hate to sound nosey, but "the Meat Lab here on campus sells fantastic hams" sounds a little scarey, are they part of an experiment????? http://www.cookinglight.com/bbs/eek.gif
We go to my mom's house and will be taking the triple lemon genoise cake and an appetizer. She is also making a ham and of course some asparagus. Don't know what else but I'll ask her.

I decided to "do" turkey. It will be just DH and me, as far as I know, and I don't want to be eating ham for a week after Easter. I have 4 individual servings of bean soup in the fridge from my last ham....
I think I will try the roasted pototoes either from the April issue or the sweet pototes from March. We too, will probably have asparagus. Ooooh, sounds yummy already!
I just made the Potatoes Anna with Bacon and Romano from the March issue and thought they would be great with turkey or lamb for Easter. They were rich and creamy tasting without a lot of fat.
SusanL- I know, it does sound funny to say we get our meat at the "Meat Lab". But that's really what it is called. The university sells beef, pork, etc and I have to say that the quality of the meat is much better and fresher than the stores around here. Last year we even got a 15 pound order of boneless chicken breasts for only $1 a pound!

My all time favorite for Easter is a deboned leg of lamb roast prepared with garlic and rosemary from Martha Stewart's cookbook. We never had lamb as I was growing up and I've had enough ham to last a life time!!!

Thanks for the ideas and suggestions. Linda, the casserole sounds very interesting..I think I'll give it a try.
