Thumbs up for the Strawberry Kiwi Salad with Basil and the Maple-Glazed Acorn Squash Rings. I served these with the Pan-Seared Scallops with Chili Cream Sauce from the recipe finder.

I guess it's time for me to delurk and review a couple of April 2001 recipes that I have made. I made the Mediterranean Lasagna last night. My husband absolutely loved it. I thought it was good, too. It didn't call for any salt at all, and I think it could have used a little in the veggie mixture. Then again, I tend to use more salt than the average person.

I also made the Pasta, Beans, and Greens. This was tasty and really easy to make. Hubby hasn't tried this one yet; I've been hoarding it for my lunch.

BTW, I absolutely adore this BB; it's quite addictive.
