Hi Everyone!

I was wondering if any of you out there who have big families could share some of your favorite CL recipes. I find that certain types of recipes are not very suitable for our family because of its size...like, for example, something with individual chicken breasts (my oldest son, a cross country runner, could probably eat SIX of them! *LOL*). I tend to like stews or casseroles because they can be easily doubled and feed quite a few people. I like the things I DO make, but I'm just looking to add to the repertoire! Thanks so much!!

I feed a family of 6, but my sons are just now creeping into the heavy duty eating years. I, too, do a lot of casseroles. I find that a 13 x 9 inch baked ziti will actually have leftovers. I also try to have generous sides for filler - really big salads and several veggies.

I have also found that cooking for 6 means 6 different palates. Serving several sides (simple ones) solves that to a degree. As well, I often have 2 sauces. Yesterday I made breaded turkey breasts, and served them with an orange-cranberry sauce, or a mayo/dijon/honey sauce. Everyone was happy.

If I am making soup on a Sunday, I will often make 2 huge pots. Then, once again, there is a choice. As well, the leftovers are great for midweek dinners and lunches.

mastercook is great to use, bc it can scale recipes for you. It's so easy to make a mistake if you are mentally multiplying every ingredient by 4!

And lastly, last year I bought a Gemini oven - the maytag kind with a second oven. That has been great ! I can cook three huge casseroles at once, or several meatloaves and dessert. It's been a big help.
